2 lbs ground beef ((ground chuck is preferred, or use a ground beef/ground pork combo))
1 1/2 cups quick oats ((or plain breadcrumbs))
1/2 cup white onion ((or yellow onion, finely diced))
3 large eggs
1 Tbsp meatloaf seasoning ((see recipe, or use 1 packet store-bought seasoning mix))
1/3 cup ketchup ((plus more for topping the meatloaf if desired))

Steps:

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x5 loaf pan or line a rimmed baking sheet with parchment paper.
  • In a large mixing bowl, add the ground beef, quick oats, diced onion, eggs, meatloaf seasoning, and ketchup. Mix until just combined, do not over-mix.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.

My friend Donna makes the best meatloaf ever. The amount of chili powder seems excessive, but it really tastes great. You can use 1 tbsp if you are fearful, but believe me - it tastes better with the amount given if you use Spice Islands brand. If your brand is very strong, cut the amount in half. 3 lbs lean ground beef
16 ounces canned creamed corn
1 large onion, diced
1 large tomatoes, chopped into about 1 inch chunks
1 green bell pepper, in 1/2 inch dice
3 -4 slices white bread, crusts removed & torn into small pieces (I use a very soft white bread for this)
2 eggs, beaten
1/2 cup ketchup, for meat mixture
4 teaspoons chili powder (I use Spice Islands)
1 teaspoon salt
1/4 teaspoon black pepper
3/4 cup ketchup, for topping

Steps:

  • Mix creamed corn, eggs, chili powder, 1/2 cup ketchup, salt, pepper and bread together. Let sit while mixing meat, onion, tomato & bell pepper in large bowl.
  • Add corn mixture to meat mixture.
  • Form into a large rectangular mound, about 2 to 3 inches high on a baking sheet with sides, to avoid dripping in oven.
  • Top with 3/4 cup ketchup.
  • Bake at 350°F for 40-45 minutes, or until cooked through and lightly browned.

1/2 lb ground beef
1/2 lb ground pork
1/2 c green bell pepper (diced)
1 c small onion (diced)
2 Tbsp mustard, spicy brown
2 eggs
1 Tbsp worcestershire sauce
1/3 c bread crumbs, seasoned
1 small tomato sauce, italian seasoned
1 Tbsp chopped chives
3 slice bacon

Steps:

  • 1. Mix 1st 8 ingredients together to form a loaf. Place in a loaf pan.
  • 2. Pour tomato sauce over top and place bacon on top.
  • 3. Cook at 350 for about an hour. Temperature in middle of loaf should be at least 160 degrees. Let sit for 15 minutes then slice.
  • 4. Use leftovers for sandwiches the next day!

2&1/2 pounds hamburger (lean to extra lean)
¼ to ½ cup finely chopped onion
chile sauce - ½ to ¾ bottle
½ to ¾ cups milk
½ pound jimmy dean sausage
1 to 2 eggs, beaten ( i add the milk to the eggs)
1 roll of ritz crackers (i use low salt)
1 tablespoon worcestershire sauce
¼ to ½ teaspoon pepper
¼ teaspoon salt

Steps:

  • 1. You really need to mix the sausage and hamburger well Mix and set in loaf pan Cook 1 & ¼ to 2 hours in oven at 350 degrees - be sure to place on a cookie sheet has the grease could overflow the edges of the loaf pan. Want to make sure cooked thoroughly because of the sausage. You will need to take this out about 1 hour into the cook time and drain off the fat.
