This article includes a recipe for Donna Leigh's Creamy Broccoli Slaw, as well as three other variations on this classic dish:

1. Broccoli Slaw with Bacon and Ranch Dressing: This variation adds bacon and ranch dressing to the traditional creamy broccoli slaw recipe. The bacon adds a smoky flavor, while the ranch dressing adds a creamy and tangy flavor.

2. Broccoli Slaw with Asian Dressing: This variation uses an Asian-inspired dressing made with soy sauce, rice vinegar, and sesame oil. The dressing is light and flavorful, and it complements the broccoli, carrots, and cabbage perfectly.

3. Broccoli Slaw with Greek Yogurt Dressing: This variation uses a healthy Greek yogurt dressing instead of mayonnaise and sour cream. The Greek yogurt dressing is tangy and creamy, and it adds a boost of protein to the slaw.

When springtime rolls around, we are always on the hunt for a quick and easy recipe that makes a great sidekick to any meal. And when the temperatures rise, it's always nice to have a new way to serve the traditional salad recipe. Let's be honest, the same old greens can get tired and boring. That's why we were thrilled to taste the Test Kitchen's new spin on the broccoli slaw. Whether you're prepping for a potluck or planning a casual backyard luncheon, this recipe, which serves ten, is sure to please. The base of this easy-to-prepare salad is a slaw mix that you can pick up in the produce aisle at the local supermarket. Our Test Kitchen suggests the broccoli slaw mix or a standard cabbage, carrot, and red cabbage slaw combination. We love the addition of the toasted pecans and scallions for adding a nice savory touch, and that satisfying crunch, and the golden raisins add an unexpected hint of sweetness. Our secret ingredient is the lemon zest which keeps the slaw vibrant and extra fresh. If you want to make this salad a main meal, we recommend tossing grilled chicken into the mix. This is a light, refreshing, and incredibly simple summer go-to recipe.

Time 45m

Yield 6 servings, 1 serving equals 1 1/2 cups coleslaw

Number Of Ingredients 10

1 cup lowfat Greek yogurt, or strained yogurt
1/3 cup raw sunflower seeds
3/4 teaspoon salt, divided
1/4 cup lowfat buttermilk
3 tablespoons lemon juice
2 tablespoons mayonnaise
2 teaspoons spicy brown mustard
1/4 teaspoon black pepper
1 1/4 pounds broccoli stalks (from about 2 1/2 pounds broccoli bunches)
1 large or 2 medium carrots

Steps:

  • If using regular yogurt, place it in a strainer lined with paper towel and set the strainer over a bowl. Let the yogurt drain and thicken for 20 minutes.
  • Preheat oven to 300 degrees F. Place sunflower seeds and 1/4 teaspoon salt on a rimmed baking sheet and shake to combine. Toast seeds until aromatic, about 10 minutes. Cool and reserve.
  • Combine yogurt, buttermilk, lemon juice, mayonnaise, mustard, 1/2 teaspoon salt and pepper. Whisk to incorporate and reserve.
  • Peel tough outer layer of broccoli stalks and trim off 1/4 inch from bottoms of stalks (should be about 3/4 of a pound. tender broccoli stalks remaining). Shred stalks in food processor, then shred carrots. Combine shredded broccoli and carrots with dressing and toss to combine. Sprinkle with sunflower seeds and serve.

Tips:

  • Use fresh, crisp broccoli for the best flavor and texture.
  • Cut the broccoli into small, bite-sized pieces so that it cooks evenly.
  • If you don't have any red onion on hand, you can use a yellow or white onion instead.
  • Be sure to drain the broccoli and onion well before adding them to the dressing. This will help to prevent the slaw from becoming watery.
  • Taste the dressing before adding it to the slaw. You may want to adjust the amount of mayonnaise or vinegar to suit your taste.
  • Serve the slaw immediately or chill it for a few hours before serving. Chilling will help the flavors to meld together.

Conclusion:

Donna Leigh's Creamy Broccoli Slaw is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be customized to your liking. If you are looking for a healthy and flavorful slaw, this recipe is definitely worth trying.
