One of my childhood favorites, had it quite often. Traditionally they do add the olives and sometimes even capers..but I don't like them.

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 17

4 lbs roasting chickens, cut into parts
4 cups long grain white rice
8 cups water
5 tablespoons oil
2 tablespoons lime juice
1 teaspoon white sugar
4 tablespoons tomato paste
1/4 cup cubanelle pepper, chopped
1 small red onion, finely chopped
1 pinch ground oregano
1 teaspoon crushed fresh garlic
1 pinch ground black pepper
1/8 cup pitted olive, chopped (optional)
1/4 cup fresh cilantro, chopped
salt
1 chicken bouillon cube
3 tablespoons adobo seasoning (Goya)

Steps:

  • Wash the chicken parts in cold water. In a large plastic bag or air tight container with lid, place the chicken, add the cilantro, lime juice, garlic, onions, pepper, oregano, adobo seasoning and black pepper. Allow it to marinate for at least 10 minutes.
  • In a large cast iron pot over high heat, add 3 tbsp of oil (reserve 2) add sugar to heated oil, and quickly stir. Don't allow it to burn. When sugar turns brown (this will happen very quickly) add the chicken without the vegetables but don't discard them. Stir the chicken and cover. Reduce heat to medium and let it simmer for 10 minutes Adding tablespoons of water regularly if needed to prevent it from burning/sticking.
  • After 10 mins add the remaining water, the tomato paste, the reserved vegetables, and the chicken bouillon cube, and stir to combine until well mixed and paste and bouillon are dissolved. Taste and add salt to taste. Should be just a little saltier than you'd prefer, because the rice and chicken will absorb a lot of it.
  • Add the rice, once all the water has evaporated, cover and simmer over minimum heat. Wait 15 mins, uncover give it all a good stir from bottom to top and add the remaining 2 tbsp oil. Cover and wait another 5 minutes Taste rice for doneness, it should be firm but tender inside. If necessary, cover and leave another 5 minutes.
  • Serve with a side of green salad, tostones and avocados; Enjoy!

ARROZ CON POLLO (DOMINICAN STYLE CHICKEN & RICE)

Arroz Con Pollo (Dominican Style Chicken & Rice) image

One pot--so simple! My MIL, who is from the Dominican Republic, has ALWAYS made this. Every since the very first time she made it for me, it has been my FAVORITE dish. Even my kids, ages 12 & 5 and are incredibly picky, will eat this meal. We usually make it with a side salad and fried Plantains like in Recipe #187281. Oh and the house smells incredible while this is cooking!

Time 45m

Yield 4 serving(s)

Number Of Ingredients 16

4 lbs chicken
4 cups rice
7 cups water
5 tablespoons oil
1 teaspoon sugar
4 tablespoons tomato paste
1/4 cup green pepper, chopped
1 pinch oregano
1 teaspoon crushed garlic
1 pinch black pepper
1/8 cup chopped pitted olive
1/4 cup celery, chopped
1 teaspoon parsley, finely chopped
1 teaspoon coriander, finely chopped
1/2 teaspoon thyme leaves
salt

Steps:

  • Before starting to cook: Remove skin from chicken and wash under warm water. Rub with wedges of lemon and cut into small pieces.
  • Marinate the chicken for approximately 10 minutes in a bowl containing the green peppers, oregano, garlic, black pepper, olives, celery, parsley, coriander, and thyme.
  • In an iron pot, heat 3 tablespoons of oil, reserving 2 tablespoons for later use. Add sugar to heated oil and quickly stir. When sugar turns dark brown, add the chicken (without the vegetables), being careful with splattering oil. Stir, cover and let simmer at medium heat for 10 minutes, adding tablespoonfuls of water regularly to prevent it from burning. Add the vegetables. Add tomato paste and stir to combine. Add remaining water and bring to a boil. Add salt to taste.
  • Add the rice and stir often to avoid excessive sticking. Once all the water has evaporated, cover with a tight-fitting lid and simmer over very low heat. Wait 15 minutes, uncover and stir, before adding remaining oil. Cover and wait another 5 minutes. Taste rice for doneness; it should be firm but tender inside. If necessary, cover and leave another 5 minutes over very low heat.

Tips:

  • Wash the chicken thoroughly: This is an important step to remove any impurities or bacteria from the chicken. Pat it dry with paper towels before cooking.
  • Use a large pot: Locrio is a one-pot dish, so make sure you have a large enough pot to accommodate all the ingredients.
  • Cook the chicken in batches: If your pot is not large enough to cook all the chicken at once, cook it in batches. This will prevent the chicken from overcrowding and ensure that it cooks evenly.
  • Sauté the vegetables before adding the rice: This will help to enhance the flavor of the vegetables and prevent them from becoming mushy.
  • Use a good quality broth: The broth is an important part of the flavor of locrio, so use a good quality broth that you enjoy the taste of.
  • Season the rice well: Don't be afraid to season the rice generously with salt, pepper, and other spices. This will help to give the rice a delicious flavor.
  • Let the locrio rest before serving: This will allow the flavors to meld together and the rice to absorb the broth.

Conclusion:

Locrio de pollo is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover chicken, and it can also be made with other types of meat, such as pork or beef. Locrio is a popular dish in many Latin American countries, and it is a staple of Dominican cuisine. If you are looking for a flavorful and easy-to-make rice dish, locrio de pollo is a great option.
