Time 2h15m

Yield 4

Number Of Ingredients 6

1 (2 to 3 pound) whole chicken
1 (12 fluid ounce) can beer
5 tablespoons poultry seasoning
4 dashes liquid smoke flavoring
4 bay leaves
1 long metal skewer

Steps:

  • Rinse and dry the chicken. Remove excess fat and leave skin on. Lift skin from breast and thigh areas, slide bay leaves under skin. Coat chicken with poultry seasoning.
  • Drink half the can of beer, pour liquid smoke into remaining beer. Raise tab on beer can until it is in the straight up position.
  • Insert beer can into chicken from the bottom until even with bottom of chicken. Insert skewer through the wing, ribs, tab on beer can, and out the opposite side. (this keeps the can from falling out the chicken).
  • Prepare grill: light the coals, and when they are ready, spread coals to form a ring around the outside edge of the grill.
  • Place chicken in center standing up on can to cook. Cover and cook for two hours.
  • Remove carefully from grill so as not to spill the contents of the can. Remove skewer and beer can, let chicken sit for fifteen minutes before cutting.

Categories     Lunch/Snacks

Time 10m

Yield 6 serving(s)

Number Of Ingredients 9

8 ounces smoked chicken or 8 ounces turkey
1 avocado, peeled
3 carrots
1 lime
1/2 cup light sour cream
1/4 teaspoon hot sauce
6 tortillas (6")
1/4 cup chopped fresh coriander or 1/4 cup thinly sliced green onion
shredded lettuce

Steps:

  • Slice chicken into 1/4-inch (0. 5-cm) strips.
  • Cut avocado into slices& carrots into thin julienned strips.
  • Grate peel from lime and stir into sour cream along with hot sauce.
  • To assemble, lay tortillas flat.
  • Place chicken strips in a line across middle of each tortilla.
  • Top with carrot and avocado.
  • Dab with sour cream, scatter coriander or green onion& top with a little lettuce.
  • Roll each into a cigar shape.
  • If not eating right away, wrap each roll in waxed paper, twist ends& refrigerate for up to half a day.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready. This will help you stay organized and avoid scrambling around in the kitchen.
  • Choose the right chicken: For this recipe, it's best to use boneless, skinless chicken breasts or thighs. If you're using chicken breasts, you'll need to pound them thin so that they cook evenly.
  • Don't overcook the chicken: Chicken is a delicate protein, so it's important to cook it until it's just cooked through. Overcooked chicken will be tough and dry.
  • Use a variety of fillings: Get creative with the fillings for your chicken roll-ups. You can use anything from cheese and ham to vegetables and fruit.
  • Serve with your favorite dipping sauce: Chicken roll-ups are delicious on their own, but they're even better when served with a dipping sauce. Try a classic ranch dressing or a flavorful salsa.

Conclusion:

Smoked chicken roll-ups are a quick and easy meal that is perfect for busy weeknights. They're also a great way to use up leftover chicken. With a variety of fillings to choose from, there's a chicken roll-up for everyone. So next time you're short on time, give this recipe a try. You won't be disappointed!
