1 cup sugar
2/3 cup milk
1/3 cup canola oil
1 large egg, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Fresh fruit or ice cream, optional

Steps:

  • In a large bowl, beat the sugar, milk, oil, egg and vanilla until well blended. Combine the flour, baking powder and salt; gradually add to sugar mixture until blended., Pour into a greased 9-in. square baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Serve with fruit or ice cream if desired.

1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
1/3 cup vegetable oil

1 1/2 cups flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup soft shortening
2/3 cup milk
1 teaspoon flavoring
1 egg

Steps:

  • First put dry ingredients into mixing bowl. Then add shortening and half of the milk. Mix until blended but not too much. Then add remaining milk, egg, and the flavoring. Mix until just smooth. It will come together nicely. Pour into greased and floured pan (I like to use Professional Pan Coating recipe number 78579. Nothing sticks when you use that to coat your pans!) Bake in 350 degree oven.

1 c sugar
2/3 c milk
1/3 c canola oil

1 tsp vanilla extract
1 1/2 c all purpose flour
2 tsp baking powder

BUTTERCREAM ICING
1/4 c butter (softened)
1/4 c shortening
3 c confectioners' sugar
1/2 tsp vanilla extract
1 - 2 Tbsp milk (1 to 2 depending on consistency that the icing is taking)

1 1/4 cups flour
1 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3/4 cup milk
1/3 cup shortening
1 egg
1 tsp. vanilla
french silk frosting, recipe follows

Steps:

  • 1. Heat oven to3 50. Grease and flour square 8 x 8 inch pan. Beat all ingredients except frosting in large mixer bowl on low speed. Scrape bowl constantly 30 seconds. Beat on high speed, scraping bowl occasionally for 3 minutes.
  • 2. Pour into pan. Bake til wooden pick comes out clean. For square pan, bake 35 to 40 minutes or a round pan, bake 35 minutes. Cool and frost with frosting. French Silk Frosting: 1/3 cup margarine, softened 1 1/3 cups powdered sugar 1 oz. melted unsweetened chocolate, cooled 1/2 tsp. vanilla 1 Tbsp milk Beat margarine, powdered sugar, chocolate and vanilla on low speed til blended.
