But on a recent trip to southern Utah, I happily sipped a moderated mojito at Red Mountain Resort, which does not serve spirits, only beer and wine. The rum in this rendition had been swapped for sauvignon blanc. The general manager, Tracey Welsh, explained: "Our inspiration was to offer a lower alcohol content in cocktail favorites our guests love, allowing them to wake up feeling refreshed the next day, and ready to go for early morning hikes." - Add half the mint leaves to the simple syrup. Set aside to infuse, 10 to 30 minutes.
- Add the tequila to a cocktail shaker filled halfway with ice. Add the simple syrup, lime juice and the remaining mint leaves. Cover and shake well.
- Fill 2 to 4 glasses with ice. Squeeze a lime wedge into each glass and run it around the rim. Add the squeezed lime wedge to each glass and strain in the cocktail mixture. Add a mint sprig to each drink. Serve and enjoy!

- Wash and stem the mint leaves, reserving 6 whole sprigs for garnish. Place the mint leaves in the bottom of a sturdy pitcher and add the sugar. Mash the mint leaves and sugar together, using the tip of a wooden spoon -- this extracts the mint oils. Add the lime juice and rum and stir until the sugar is dissolved. The recipe can be made several hours ahead to this stage. However, expect some discoloring in the mint leaves if you make the mojitos more than 20 minutes ahead.
