SCRAMBLED EGGS RECIPE WITH DILL

Scrambled Eggs Recipe With Dill image

Scrambled eggs should be soft, creamy and gently scrambled. A quality non-stick pan and silicon spatula are really useful. It's important that you use low heat and don't forget about the chance of carryover cooking. Eggs are delicate and cook very quickly. Even over low heat eggs can go from liquid to overcooked in seconds. You want to take the pan off of the heat before your eggs have finished cooking. Give the eggs a few seconds in the hot pan (off the heat) and you'll find the eggs turn out to be perfectly cooked - not dry, not too wet.

Time 15m

Yield Makes 3 to 4 servings

Number Of Ingredients 6

1 tablespoon butter
6 large eggs
1 tablespoon chopped fresh dill, plus more for serving
1/8 teaspoon sea salt, or more to taste
1 tablespoon mascarpone cheese or substitute cream cheese or fresh goat cheese
Fresh ground black pepper

Steps:

  • Melt the butter in a medium non-stick pan over medium-low heat.
  • Crack eggs into a bowl, add the dill and a pinch of salt, and then whisk until well blended.
  • When the butter begins to bubble, pour in the eggs and immediately use a silicon spatula to swirl in small circles around the pan, without stopping, until the eggs look slightly thickened and very small curds begin to form, about 30 seconds. Change from making circles to making long sweeps across the pan until you see larger, creamy curds; about 20 seconds.
  • When the eggs are softly set and slightly runny in places, remove the pan from the heat and then stir in the cheese. Serve with an extra sprinkle of salt, a grind of black pepper and more dill (if desired).

DILLY SCRAMBLED EGGS

My good friend had me over for brunch and we had these eggs. Most of us know how to make good scrambled eggs. This is a delicious change from the norm. Great for brunch or dinner.

Categories     Eggs

Number Of Ingredients 4

6 eggs
2 tsp fresh dill, minced (or in a pinch, use 1 tsp dry)
1 green onion, chopped (more or less to your taste. onion can over power a dish, so go easy)
salt and pepper to taste

Steps:

  • 1. Heat butter and/or oil in a medium skillet over medium low heat.
  • 2. Whisk together eggs, dill and onion until well blended and frothy. (Don't do this too early)
  • 3. Pour into skillet and stir gently until set, a little moist, but not runny.(They will continue to cook a bit after you take them off of the heat) Season with salt and pepper and serve.

PERFECT SCRAMBLED EGGS

Steps:

  • Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
  • TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
  • Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
  • Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
  • Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.

Tips:

  • Use plenty of fresh dill. It's the star of the show, so don't be shy with it. Fresh dill has a more intense flavor than dried dill, so it's best to use fresh whenever possible.
  • Use high-quality eggs. The better the eggs, the better the scrambled eggs will be. Look for eggs that are fresh and free-range.
  • Don't overcook the eggs. Scrambled eggs should be cooked until they are just set, but still slightly runny. Overcooked eggs are tough and rubbery.
  • Season the eggs with salt and pepper. This is a classic flavor combination that always works well with scrambled eggs.
  • Add other ingredients to taste. Scrambled eggs are a versatile dish that can be customized to your liking. Some popular additions include cheese, vegetables, and meat.

Conclusion:

Dilly scrambled eggs are a quick and easy breakfast that is perfect for any occasion. They're packed with flavor and nutrients, and they're sure to please everyone at the table. So next time you're looking for a delicious and satisfying breakfast, give dilly scrambled eggs a try.
