DILLED CUCUMBERS MORGAN

Categories     Salad     Vegetable     Side     No-Cook     Vegetarian

Yield 3 cups

Number Of Ingredients 9

2 tablespoons white wine vinegar
2 tablespoons Dijon mustard
2 teaspoons sugar
1/2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons chopped fresh dill
2 hothouse cucumbers (about 1 1/2 pounds), quartered, seeded, and sliced crosswise into 1/4-inch pieces
1 medium sweet onion (about 1/2 pound), peeled, quartered, and sliced very thin

Steps:

  • In a bowl, whisk together vinegar, mustard, sugar, salt, pepper, and dill. Add cucumbers and onion, and toss to coat well. Cover and chill. Cucumbers keep, covered and chilled, for 2 days.

Tips:

  • Choose the right cucumbers: For the best results, use fresh, firm cucumbers that are about 6 inches long and 2 inches in diameter. English cucumbers are a good option because they have fewer seeds and are less bitter than other varieties.
  • Slice the cucumbers evenly: This will help them pickle evenly. You can use a mandoline or a sharp knife to slice the cucumbers.
  • Use a flavorful brine: The brine is what gives the cucumbers their flavor, so make sure to use a brine that is flavorful and well-seasoned. The recipe in the article uses a brine made with water, vinegar, sugar, salt, dill, and garlic.
  • Let the cucumbers pickle for at least 24 hours: The longer you let the cucumbers pickle, the more flavorful they will be. You can pickle them for up to 2 weeks, but they will be best if you eat them within a few days.
  • Store the cucumbers properly: Once the cucumbers are pickled, store them in a covered container in the refrigerator. They will last for up to 2 weeks.

Conclusion:

Dilled cucumbers are a delicious and easy-to-make snack or side dish. They are perfect for summer potlucks and picnics. With a few simple ingredients and a little bit of time, you can make your own delicious dilly cucumbers at home.
