Steps:
- Preheat broiler or prepare grill on top of stove.
- Chop whole onion; wash and chop dill, and rinse capers. Mix ingredients together with horseradish and egg whites in a bowl large enough to hold all the ingredients.
- Grill or broil salmon following the Canadian rule: measure fish at thickest point and cook 8 minutes to the inch. When salmon is cooked, flake and stir into bowl, and mix well. Shape into 4 patties.
- Grill patties on top of stove, or preheat a nonstick skillet and saute them until brown on both sides, about 4 or 5 minutes total.

Steps:
- To make the salmon cakes, first mix together yogurt, Parmesan cheese, egg, mustard, chives, parsley, shallot, garlic, salt and pepper in a large bowl.
- Gently mix salmon and panko breadcrumbs into the yogurt mixture.
- Divide salmon-yogurt mixture into 8 equal portions and shape into 2-inch cakes. Refrigerate for 1 to 4 hours.
- Meanwhile, prepare the lime dill sauce. In a medium bowl, stir together yogurt, lime juice, lime zest, dill, salt and pepper. Mix well and refrigerate until well chilled.
- To finish the salmon cakes, spray a large nonstick skillet with nonstick cooking spray and place over medium high heat.

- Flake salmon so no large lumps remain.
- Add egg, mayo, salt, pepper, dill and breadcrumbs. Mix well.
- Form into four cakes. Coat with additional breadcrumbs.
- Heat a skillet over medium heat and melt 1 Tbsp of butter. Add olive oil.
- Fry cakes in skillet until golden on both sides -- about 5 minutes per side.
- Remove cakes and to the pan, add 2 tbsp butter and 2 tbsp flour. Cook, stirring, until the roux is bubbly.
- Slowly add the milk/salmon juice, stirring all the while.
- Simmer 3 minutes, adding dill during last minute of cooking.
- Serve over fish cakes.
SALMON CAKES WITH LEMON, DILL, AND HOMEMADE DIJON MAYONNAISE

- Combine egg yolk, Dijon mustard, and lemon juice in a blender. Blend on high, leaving the lid partially open, until smooth. With motor running, slowly pour in oil in a thin stream; blend until combined. Season to taste with salt and more lemon juice, if desired. Set aside 1/3 cup for salmon cakes. Stir dill into remaining mayonnaise. Place in small bowl; cover and chill. Salmon Cakes Preheat oven to 400°. Brush salmon with oil. Place salmon in an 8x8" baking dish and bake until flesh is just opaque, about 12 minutes; let cool. DO AHEAD: Salmon can be cooked 1 day ahead. Wrap in plastic and keep chilled. SALMON CAKES WITH YOGURT AND DILL SAUCE
Steps:
- In a medium sized mixing bowl, combine all ingredients, retaining 1/3 cup panko crumbs for coating. Mix with a fork until moist, but not runny. If necessary, add more breadcrumbs. Put remaining panko crumbs on a plate or in bowl. Form salmon mixture into flat patties, about the width of a tennis ball. Roll patties in panko crumbs until evenly coated. In a large frying pan, heat vegetable oil on medium to high heat for 2 minutes. Carefully add patties and fry on each side until golden brown, approximately 1-2 minutes. Remove from oil and set on paper towels to remove excess oil. While cooling patties, combine other 1/3 cup yogurt, juice of half a lemon, 1 T. dill (or 3 T. fresh) and pinch of sugar in a small bowl. Combine until smooth. Arrange cakes on a platter or individual plates and top with yogurt dill sauce just prior to serving.
SALMON AND DILL BURGERS OR CAKES
Wow! I made these for dinner last night and they were incredible! Simple, delicious, fast and healthy. The recipe comes from Real Simple magazine (June/July 2004), and I made it as written except that after pulverizing the bread (I used whole wheat since we don't "do" white bread in my house), I just added all the other ingredients to the food processor, too. This made it extremely simple. I am sure the fish was ground up more than the recipe intended, but we liked it that way. I cooked this in an indoor George Foreman-type grill, and they took about 6-7 minutes. The magazine suggests serving this on a bun and topping the patty with traditional cole slaw and dressing, but we had them as-is with some seafood sauce (and some steamed asparagus, a salad, and a Frozen Malibu Sunshine drink -- which I also just posted the recipe for). It would work equally well with any of your favorite condiments, and I think it would be awesome over some greens with a citrus vinaigrette or ranch dressing! I plan to make these a lot!!!

- 1. Heat 1 1/2 tsp evoo in nonstick skillet,,add onion and celery, cook stirring till softened. Stir in parsley and remove from heat. 2. Place salmon in bowl and flake apart with fork. Add egg and mustard, mix well. Add onion mixture, breadcrumbs and pepper. Mix well.Make into 8 patties. 3. Heat remaining oil in non-stick fry pan over medium heat. Place 4 patties in pan till brown and a little crispy ..about 10 mins each side. Repeat with remaining patties. Meanwhile make the dill sauce by mixing all thh ingredients together.
