these are a delicious new way to use up potatoes.

Provided by Laura Mattingly

Categories     Potatoes

Number Of Ingredients 6

1 pkg (20 oz) refrigerated red potato wedges (i used fresh potatoes so you can use either)
1/2 tsp salt
1/2 tsp pepper
1 Tbsp olive oil
2 Tbsp grated parmesan cheese
1 tsp snipped fresh dill or 1/4 tsp. dill weed

Steps:

  • 1. In a large skillet, cook the potato wedges, salt and pepper in oil over medium heat for 10-15 minutes or till golden brown, stirring occasionally.
  • 2. Remove from heat; stir in cheese and dill.

Tips:

  • Choose firm, waxy potatoes for the best results. Potatoes like Yukon Gold, Red Potatoes, and Fingerling Potatoes are all great options.
  • Cut the potatoes into even-sized wedges so that they cook evenly.
  • Toss the potato wedges with olive oil, dill, garlic powder, onion powder, salt, and pepper to coat them evenly.
  • Spread the potato wedges in a single layer on a baking sheet. Overcrowding the pan will prevent them from getting crispy.
  • Roast the potato wedges in a hot oven until they are tender on the inside and crispy on the outside. This usually takes about 25 minutes.
  • Serve the potato wedges immediately with your favorite dipping sauce.

Conclusion:

Dill potato wedges are a delicious and easy-to-make side dish that is perfect for any occasion. They are crispy, flavorful, and packed with dill flavor. Whether you are serving them at a summer barbecue or a weeknight dinner, these potato wedges are sure to be a hit.
