Yield 6

Number Of Ingredients 13

cooking spray
1 ½ cups elbow macaroni
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
1 cup shredded extra-sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
⅓ cup dill pickle relish, well drained
¼ cup minced onion
1 teaspoon chile-garlic sauce (such as Sriracha®)
salt and ground black pepper to taste
1 slice bread
1 teaspoon butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 1 1/2-quart casserole dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 7 minutes, making sure not to overcook. Drain and set aside.
  • While the macaroni is cooking, melt 3 tablespoons butter over medium-low heat in a large saucepan. Blend in flour and cook, stirring constantly, until mixture becomes paste-like and light golden brown, about 5 minutes. Gradually whisk in milk and bring to a simmer over medium heat. Cook and stir until thickened, 10 to 15 minutes.
  • Mix in Cheddar cheese and Monterey Jack cheese; stir until melted. Add dill pickle relish, onion, Sriracha sauce, salt, and pepper to cheese mixture. Stir in cooked macaroni. Pour mixture into the prepared casserole dish.
  • Butter both sides of bread and tear into large pieces. Blend in a food processor or electric blender until you have crumbs. Spread on top of casserole.
  • Bake in the preheated oven until bubbling and browned on top, about 45 minutes.

Time 28m

Yield 4 to 6 servings

Number Of Ingredients 13

1/4 medium red onion, minced
2 teaspoons kosher salt, plus additional for salting water
8 ounces elbow macaroni (about 2 cups)
2 tablespoons milk
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
Freshly ground black pepper
1/3 cup extra-virgin olive oil
1/3 cup sour cream
6 ounces cooked ham, cut into 1/3-inch cubes
3/4 cup frozen baby peas, thawed (about 4 ounces)
2 ribs celery, with leaves, diced
2 tablespoons chopped fresh dill

Steps:

  • To mellow the minced onion, soak it in cold water while you make the salad.
  • Bring a large pot of cold water to a boil over high heat and salt it generously. Add the macaroni and boil, stirring occasionally, until al dente, about 8 minutes. Drain the macaroni in a colander, put in a serving bowl, and toss with the milk. Allow the macaroni to cool slightly while you make the dressing.
  • For the dressing: Whisk the vinegar, mustard, the 2 teaspoons salt, and black pepper to taste in a large bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in the sour cream.
  • Drain the onions, pat dry, and add to the macaroni along with the ham, peas, celery, and dill. Add the dressing and fold to coat the pasta evenly. Serve immediately or cover and refrigerate until ready to serve.

TUNA, NOODLES, PICKLES AND CHEESE

This recipe came from my grandmother, who used peas in her version instead of pickles. My mother changed the recipe and I have altered it even more. The flavors of these ingredients blended together in what is reminiscent of a cold macaroni or potato salad will be your family's new favorite!

Tips:

  • Choose the right pasta. Elbow macaroni is the classic choice for macaroni and cheese, but you can use any short pasta shape, such as penne, shells, or rotini.
  • Use a good quality cheese. The type of cheese you use will make a big difference in the flavor of your macaroni and cheese. Use a sharp cheddar cheese for a classic flavor, or try a combination of cheeses, such as cheddar, Gruyère, and Parmesan.
  • Make a roux. A roux is a mixture of butter and flour that helps to thicken the cheese sauce. To make a roux, melt the butter in a saucepan over medium heat. Add the flour and whisk until the mixture is smooth and golden brown.
  • Season the cheese sauce. In addition to salt and pepper, you can add other seasonings to your cheese sauce, such as garlic powder, onion powder, paprika, or cayenne pepper.
  • Cook the macaroni until it is al dente. Al dente means "to the tooth" in Italian. It refers to the texture of pasta that is cooked through but still has a slight bite to it.
  • Add the macaroni to the cheese sauce. Once the macaroni is cooked, drain it and add it to the cheese sauce. Stir until the macaroni is evenly coated with the sauce.
  • Top with breadcrumbs. Before baking, top the macaroni and cheese with breadcrumbs. This will give it a golden brown crust.
  • Bake until bubbly. Bake the macaroni and cheese until it is bubbly and golden brown. This usually takes about 20 minutes.
  • Let it cool slightly before serving. Let the macaroni and cheese cool slightly before serving so that it has a chance to set.

Conclusion:

Dill pickle macaroni and cheese is a fun and unique twist on the classic dish. The dill pickles add a tangy flavor that pairs perfectly with the creamy cheese sauce. This dish is sure to be a hit with your friends and family.
