COLA BBQ CHICKEN

Cola BBQ Chicken image

My dad has been making a basic version of this family favorite for years. I've recently made it my own by spicing it up a bit with hoisin sauce and red pepper flakes. Sometimes I let the chicken and sauce simmer in my slow cooker. -Brigette Schroeder, Yorkville, Illinois

Tips:

  • Choose the right chicken. Bone-in, skin-on chicken thighs or breasts work best for this recipe, as they will stay moist and flavorful during cooking.
  • Use a good quality barbecue sauce. The barbecue sauce is the key to the flavor of this dish, so choose one that you enjoy the taste of. You can use a store-bought sauce or make your own.
  • Don't overcook the chicken. Chicken is best when cooked to an internal temperature of 165 degrees Fahrenheit. Overcooking will make the chicken dry and tough.
  • Let the chicken rest before serving. Allowing the chicken to rest for a few minutes before serving will help the juices redistribute, resulting in more tender and flavorful meat.
