Time 31m

Yield 32

Number Of Ingredients 5

4 pounds medium pears, quartered and cored
2 cups sugar
1 teaspoon grated orange zest
¼ teaspoon ground nutmeg
¼ cup orange juice

Steps:

  • Place pears into a large pot over medium heat, and add just enough water to cover the bottom of the pot and keep them from sticking, about 1/2 cup. Cook until the pears are soft, about 30 minutes. Press pears through a sieve or food mill, and measure out 2 quarts of the pulp.
  • Pour the pear pulp and sugar into a large saucepan and stir to dissolve sugar. Stir in the orange zest, nutmeg and orange juice. Cook over medium heat until the mixture is thick enough to mound in a spoon. When the mixture begins to thicken, stir frequently to prevent scorching on the bottom. This will take about 1 hour.
  • Ladle the pear butter into hot sterile jars, leaving 1/4 inch of headspace. Remove air bubbles by sliding a metal spatula around where the pear butter touches the glass. Wipe jar rims clean, and seal with lids and rings. Process for 10 minutes in a boiling water bath. The water should cover the jars by 1 inch. Check with your local extension for exact processing times for your area.

Time 45m

Yield 8 serving(s)

Number Of Ingredients 8

1 1/2 lbs pears (Bartlett or D'anjou, 720g)
1 teaspoon grated lemon zest (5 ml)
2 teaspoons fresh lemon juice (10 ml)
2 tablespoons one-to-one sugar substitute (I used Splenda, 30 g)
1 sheet frozen puff pastry, thawed
2 tablespoons slivered almonds, toasted (30 g)
1/2 teaspoon sugar (2.5 ml)
1/2 teaspoon cinnamon (2.5 ml)

Steps:

  • Preheat oven to 425F (220C)Gas Mark 7.
  • Use nonstick cookie sheet, spray lightly or cover with parchment paper.
  • Peel, core and thinly slice pears.
  • Lightly coat a nonstick pan with butter flavored cooking spray. (I just used butter).
  • Add the pears and saute for 2 minutes.
  • Stir in the zest, juice and sugar substitute. Cook until the pears are just cooked through. Set aside.
  • On a floured surface, roll the puff pastry to make a 12 1/2 X 10 1/2 (31.25 x 26.25) inch rectangle.
  • Sprinkle almonds on the pastry.
  • Drain pears and place down middle third (long way) of the puff pastry to within 1/2 inch (1.25cm) of the top and bottom edge.
  • Spray the edges of the pastry and fold each 1/3 side over fruit. I brushed on butter.
  • Place seam side down on cookie sheet.
  • Make slashes every 2 inches (5 cm).
  • Mix sugar and cinnamon and sprinkle on top.
  • Coat with butter flavored cooking spray. If you use melted butter, put on before cinnamon/sugar.

Tips:

  • Choose ripe pears: Use ripe pears for the best flavor and texture. Overripe pears will make the pear butter too mushy.
  • Use a slow cooker: A slow cooker is the easiest way to make pear butter. Simply combine the pears, sweetener, spices, and lemon juice in the slow cooker and cook on low for 8-10 hours.
  • Simmer on the stovetop: You can also make pear butter on the stovetop. Combine the pears, sweetener, spices, and lemon juice in a large saucepan and bring to a boil. Reduce heat to low and simmer for 1-2 hours, or until the pears are very soft.
  • Use a food processor or blender: Once the pears are cooked, use a food processor or blender to puree them until smooth. You can also use an immersion blender to puree the pears directly in the slow cooker or saucepan.
  • Add sweetener to taste: The amount of sweetener you need will depend on the sweetness of your pears. Start with a small amount and add more to taste.
  • Store pear butter in the refrigerator or freezer: Pear butter can be stored in the refrigerator for up to 2 weeks or in the freezer for up to 6 months.

Conclusion:

Pear butter is a versatile and delicious spread that can be enjoyed on toast, crackers, or fruit. It's also a great way to use up ripe pears. With its sweet and tangy flavor, pear butter is a surefire hit with family and friends.
