PEANUT BUTTER COOKIES (DIABETIC FRIENDLY)

PEANUT BUTTER COOKIES (DIABETIC FRIENDLY) image

This recipe comes from a cookbook called: "America's Best Cookbook for Kids With Diabetes". (I figured it is a pretty good cookbook for anyone with diabetes though)...It was written in 2005 by C Bartley. A friend gave me the book and the recipes that I have tried are awesome. I think this one would be a great "Gift In a Jar"...

Tips for Making Diabetic-Friendly Peanut Butter Cookies

  • Use a sugar substitute. This is the most important tip for making diabetic-friendly peanut butter cookies. There are many different sugar substitutes available, so choose one that you like the taste of and that works well in baking. Some popular sugar substitutes include stevia, erythritol, and monk fruit.
  • Use whole wheat flour. Whole wheat flour is a good source of fiber, which can help to regulate blood sugar levels. It also has a lower glycemic index than white flour, which means that it won't cause blood sugar levels to spike as quickly.
  • Add some healthy fats. Healthy fats, such as those found in peanut butter, can help to slow down the absorption of sugar into the bloodstream. This can also help to prevent blood sugar spikes.
  • Don't overbake the cookies. Overbaked cookies will be dry and crumbly, and they will have a higher glycemic index. Bake the cookies just until they are set, and then remove them from the oven.
  • Enjoy your cookies in moderation. Even though these cookies are diabetic-friendly, they should still be enjoyed in moderation. Eating too many cookies, even diabetic-friendly ones, can still lead to blood sugar problems.

Conclusion

Diabetic-friendly peanut butter cookies can be a delicious and satisfying treat for people with diabetes. By following these tips, you can make cookies that are low in sugar, high in fiber, and healthy fats. Enjoy your cookies in moderation, and they can be a part of a healthy diet for people with diabetes.
