1/4 c all purpose flour
1 tsp vanilla extract

1/4 c vegetable oil
1/4 tsp almond extract
1/3 c unsweetened flaked coconut (optional)
1 Tbsp powdered sugar, sifted (optional)

Tips:

  • Use almond flour instead of all-purpose flour: Almond flour is a low-carb alternative to all-purpose flour and provides a nutty flavor to the crust.
  • Sweeten with erythritol or monk fruit: These natural sweeteners have a low glycemic index and won't raise blood sugar levels.
  • Use frozen berries: Frozen berries are just as nutritious as fresh berries and are often more affordable.
  • Add chia seeds or flaxseed meal: These seeds are rich in fiber and omega-3 fatty acids, which can help lower blood sugar levels and improve heart health.
  • Use a sugar-free pie crust mix: If you're short on time, you can use a sugar-free pie crust mix to make the crust.

Conclusion:

The diabetic impossible berry pie is a delicious and healthy dessert that can be enjoyed by people with diabetes. Made with a low-carb almond flour crust and sweetened with natural sweeteners, this pie is a great way to satisfy your sweet tooth without spiking your blood sugar levels.
