This is my version of a Company's Coming recipe I made suitable for a diabetic diet. Oil may be replaced with more applesauce if you're watching your fat intake. You can also add rasins, blueberries, apples and cinnamon or anything else you can think of.

FLAX SEED-BRAN MUFFINS
These are low-fat and low-sugar, which is good for us diabetics. I use a little real sugar with the Splenda, because the texture turns out better, and my blood-sugar levels are under control, but some diabetics may want to use a cup of Splenda and no brown sugar. (or use Splenda Brown Sugar Blend-I have never used it so don't know the proportions)

Tips:
- Use a sugar substitute: Since these muffins are intended for individuals with diabetes, it is important to use a sugar substitute that does not raise blood sugar levels. Some popular sugar substitutes include stevia, erythritol, and xylitol.
- Make sure to grind the flaxseeds: Grinding the flaxseeds helps to release their nutrients and make them more digestible. You can use a coffee grinder or a food processor to grind the flaxseeds.
- Don't overmix the batter: Overmixing the batter can result in tough muffins. Mix the ingredients just until they are combined.
- Let the muffins cool completely before frosting them: This will help to prevent the frosting from melting.
Conclusion:
These diabetic flaxseed, wheat, and bran muffins are a delicious and healthy way to start your day. They are packed with nutrients and fiber, and they are low in sugar and carbohydrates. These muffins are also easy to make, and they can be stored in the freezer for up to two months. So, next time you are looking for a healthy and satisfying breakfast option, give these muffins a try!
