CHICKEN TORTILLA CASSEROLE

Categories     main-dish

Time 1h45m

Yield 12 servings

Number Of Ingredients 18

4 boneless, skinless chicken breasts
Salt
Chicken Gravy, recipe follows
1 cup canned green chiles, chopped and drained
1 medium onion, finely chopped
1 clove garlic, minced
1 cup sour cream
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper
Cooking spray
Twenty-four 6-inch corn tortillas
3 cups shredded Cheddar
6 tablespoons butter
6 tablespoons all-purpose flour
1 cup chicken stock
1 cup milk
Salt and pepper

Steps:

  • Add the chicken to a large stockpot, cover with water and add a large pinch of salt. Bring to a boil and cook until tender, about 30 minutes. Remove the chicken from the pot and set aside to cool. When cool enough to handle, shred the chicken and set aside. Reserve 3 1/3 cups of the broth (1 cup is for the chicken gravy, supplement with boxed stock if you don't have enough.)
  • Preheat the oven to 350 degrees F. Spray a 13- by 9-inch baking dish with cooking spray.
  • In a large saucepan, combine 2 1/3 cups of the reserved broth, the Chicken Gravy, green chiles, onions, garlic, sour cream, cumin, salt and pepper. Bring the mixture to a boil, stirring constantly. Remove from the heat.
  • Spread 1 cup of the mixture into the prepared baking dish. Arrange a layer of 6 tortillas over the mixture, and then top with 1 cup shredded chicken and 1/2 cup of the Cheddar. Repeat this layer three more times, ending with cheese. Spread any remaining mixture over the cheese. Make sure all of the tortillas are covered or they will get very hard during baking. Bake uncovered for 30 minutes.
  • Melt the butter in a medium saucepan and whisk in the flour to make a roux. Cook over medium heat, whisking constantly, until the mixture bubbles and the flour turns light brown in color. Gradually whisk in the stock and milk and continue to stir while cooking over medium heat. When the mixture thickens, after about 5 minutes, whisk in some salt and pepper.

Time 1h10m

Number Of Ingredients 10

1 can(s) cream of chicken soup
1 can(s) chopped green chili peppers; 7oz
1 c sour cream; 8oz
1/2 c milk
2 1/2 c boneless chicken
1 medium bell pepper, chopped
1 large tomato, chopped (1 cup)
1 1/2 c cheddar cheese or Mexican cheese blend
2 box chopped spinach, unthaw & squeeze out water
8 (6 or 7 in) corn tortillas, cut in bite size pieces

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a large bowl, add cream of chicken soup, sour cream, chopped chilies, milk, green pepper, tomato, corn tortillas, salt, pepper, 1 cup of cheese, and chopped chicken. The chicken you buy already baked at the grocery store works well. Stir together.
  • 3. Pour half in a 9X13 pan that has been sprayed with cooking spray.
  • 4. Then layer the spinach over the top of the mixture. Add remaining mixture on top of the spinach. I always add more cheese than the recipe calls for.
  • 5. Bake at 350 degrees for 45 to 50 minutes.
  • 6. Take out and top with remaining cheese. Put back in the oven until the cheese melts and the casserole is bubbly.
  • 7. Makes approx. 8 servings.

SPICY CHICKEN-TORTILLA CHIP CASSEROLE

Provided by Food Network Kitchen

Time 1h

Yield 6 servings

Number Of Ingredients 15

2 tablespoons unsalted butter, plus more for the dish
1 bunch scallions, chopped
2 cloves garlic, chopped
2 tablespoons all-purpose flour
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1 1/2 cups low-sodium chicken broth
1 cup heavy cream
1 1/2 cups salsa verde
3 cups cubed rotisserie chicken, skin removed
1 15-ounce can white beans, drained and rinsed
1 cup fresh cilantro, plus more for topping
1 8-ounce bag tortilla chips, coarsely crushed (about 4 cups)
2 cups shredded mild cheddar cheese (about 8 ounces)

Steps:

  • Position a rack in the upper third of the oven; preheat to 400 degrees F. Melt the butter in a large pot over medium heat. Add the scallions and garlic and cook until softened, about 2 minutes. Sprinkle in the flour, cumin, oregano and cayenne and stir until coated. Add the chicken broth and heavy cream and bring to a simmer. Cook until slightly thickened, about 2 minutes. Stir in the salsa and remove from the heat. Stir in the chicken, white beans and 1 cup cilantro.
  • Butter a 3-quart baking dish. Spread one-third of the crushed tortilla chips in the bottom. Top with half of the chicken mixture. Spread another layer of tortilla chips on top and sprinkle with half of the cheese. Top with the remaining chicken mixture, tortilla chips and cheese. Cover with foil and bake 30 minutes. Uncover and bake until lightly browned and bubbling, about 10 minutes. Top with more cilantro.

Tips:

  • For a creamier casserole, use a combination of cream of chicken soup and cream of mushroom soup.
  • To add a bit of heat, use a can of diced tomatoes with green chiles instead of regular diced tomatoes.
  • If you don't have any spinach on hand, you can use chopped kale or collard greens instead.
  • To make the casserole ahead of time, assemble it and then refrigerate it overnight. Before baking, let it come to room temperature for about 30 minutes.
  • Serve the casserole with your favorite toppings, such as sour cream, salsa, guacamole, or shredded cheese.

Conclusion:

This chicken tortilla spinach casserole is a quick and easy meal that is perfect for busy weeknights. It is also a great way to use up leftover chicken or tortillas. The casserole is packed with flavor and is sure to be a hit with your family and friends. So next time you are looking for a delicious and easy casserole recipe, give this one a try!
