These are sinfully rich and always a hit at potlucks. The person I got the recipe from said they are called Neiman Marcus bars because the ingredients are expensive (I think she was talking about the 2 cups of pecans).

Time 8m

Yield 4 cups

Number Of Ingredients 6

1 tablespoon kosher salt
2 teaspoons celery salt
1 teaspoon garlic salt
1/4 teaspoon cayenne powder
2 tablespoons vegetable oil
1 lb walnuts or 1 lb almonds

Steps:

  • Mix the salt, celery salt, garlic salt and cayenne together in a bowl and set aside.
  • Heat the oil in a heavy-bottomed saucepan over medium heat.
  • When the oil is hot, add the nuts and cook for about 2 minutes, or until they begin to brown; it is important to keep shaking the pan while the nuts are cooking to avoid burning them.
  • Drain the nuts on paper towels.
  • Transfer the nuts to a bowl while still hot and sprinkle with the salt mixture.
  • Mix thoroughly until the nuts are evenly coated.
  • Let cool to room temperature.
  • Makes about 4 cups.

Tips:

  • Use fresh pecans for the best flavor and texture.
  • Toast the pecans in the oven before boiling them in the sugar syrup. This will help to bring out their natural sweetness and make them more crunchy.
  • Be careful not to overcook the sugar syrup. It should reach a temperature of 235 degrees Fahrenheit (113 degrees Celsius). If it gets too hot, it will start to crystallize.
  • Coat the pecans in the sugar syrup as soon as it is ready. This will help to prevent them from sticking together.
  • Spread the pecans out on a baking sheet to cool. This will help to prevent them from clumping together.
  • Store the pecans in an airtight container at room temperature for up to 2 weeks.

Conclusion:

Deviled pecans are a delicious and easy-to-make snack or party food. They are also a great way to use up leftover pecans. With just a few simple ingredients, you can create a sweet and spicy treat that everyone will love. So next time you are looking for a quick and easy snack, give deviled pecans a try. You won't be disappointed.
