CAJUN DEVILED EGGS RECIPE BY TASTY

- Place the eggs in a pot and fill with cold water until the eggs are just covered. Bring the pot to a boil, then cover, remove from heat, and let sit for about 12 minutes.
- Transfer the eggs to a bowl of ice water for about 3 minutes, then peel them and cut them in half. Transfer the egg yolks to a bowl, and set the cooked egg whites aside.
- Mix the mayonnaise, mustard, Cajun seasoning, celery, bell pepper, and hot sauce with the yolks and transfer to a piping bag. (Alternatively, use a zip-top bag with a corner cut off.)
- Pipe the mixture into the eggs, garnish with the smoked paprika and green onion, and serve chilled.

Everybody has there own special recipe for deviled eggs. This is my recipe for (4 eggs) eggs with a kick.Adjust ingredients for a dozen or more. I have served these many times at party's and various functions. No mater how many eggs I bring,the're never is enough! Chopped chicken, ham or shrimp can be added if your taste buds run...

- 1. Hard boil your eggs. When they are cold, shell and cut in half. The egg yolks go into a bowl and mash them. Save the whites onto a dish.
- 2. In a bowl combine egg yolks, salt, dry mustard, cayenne powder,vinegar, and melted butter. Mish and mash all ingredients together.
- 3. Take 1 heaping teaspoon of yolk mixture and with your hands roll into a round ball, the size of the original yolk. Put yolk ball into the egg white halves.
- 4. Sprinkle tops with dried parsley. Or a fresh tiny sprig of parsley on each egg.. These have a little kick...but oh so good. Put in refrigerator to set up. If you are counting... there are only six on the plate. I ate two..for a taste test. YUM!!

This recipe has been in my recipe box a long time- I don't remember where I got the recipe showing this photo. I have been collecting recipe for so long , about 56 years. This is a great recipe to serve at Easter brunch. I like this recipe because it is a little different than the regular deviled egg recipes.

- 1. In a medium bowl, combine the first 7 ingredients until creamy. Using the white of the egg and the yolk. Shape into 1-inch balls. Roll in cheese. Cover and chill until serving.
- 2. Note: For Christmas I like to add some parsley to some of the cheese and roll 1/2 the balls in this. The other half I mix a little paprika with the cheese and roll them in this.
Tips:
- For a smoother texture, use a food processor to blend the egg yolks and other ingredients.
- If you don't have a food processor, you can mash the egg yolks and other ingredients with a fork until smooth.
- Be careful not to overcook the eggs, as this will make them tough.
- For a more flavorful filling, add a teaspoon of your favorite herbs or spices to the egg yolk mixture.
- To make the deviled egg balls ahead of time, simply cover them and refrigerate for up to 24 hours.
