1/4 cup chardonnay
Kosher salt and freshly ground black pepper
2 jalapenos
4 serrano chiles
2 habanero chiles
2 tablespoons extra-virgin olive oil
2 tablespoons ketchup
1/4 teaspoon chipotle puree
Kosher salt and freshly ground black pepper
2 habanero chiles
1/2 clove garlic
1/2 cup diced tomato
1 tablespoon chopped onion
1 teaspoon lemon juice
1/4 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper
6 sprigs cilantro
1/2 cup mayonnaise
1 1/2 teaspoons Sriracha
1/4 teaspoon lemon juice
Kosher salt and freshly ground black pepper

Steps:

  • Heat a grill to medium-high. Shape the ground chuck into four 6-ounce burger patties and set aside.
  • Toast the buns on the grill. Place a lettuce leaf and a tomato slice on each bottom bun. Set aside.
  • Season the burger patties with salt and pepper, and then grill. After flipping the patties, top each with a spoonful of Chipotle Onion, followed by a spoonful of Spicy Chile Pepper Medley, a squirt of Chipotle Ketchup and a slice of pepper jack cheese. Cover the grill and cook until the cheese is slightly melted.
  • Scoop the patties onto the bottom buns. Top each with two slices of bacon and a spoonful of Habanero Relish. Slather the top buns with Sriracha Mayo and place on top of the burgers.
  • Saute the red onions in the olive oil until soft. Stir in the chipotle puree and cook for 1 minute. Add the chardonnay and cook, stirring, for another minute. Add salt and pepper to taste.
  • Pan fry the jalapenos, serranos and habaneros in the olive oil until soft. Let cool for 10 minutes, then peel off the skins. Slice the chiles lengthwise and mix together.
  • Mix the ketchup, chipotle puree and salt and pepper to taste until fully blended.
  • Pulse the habaneros and garlic in a food processor until coarsely chopped, 5 to 10 seconds. Add the tomatoes, onions, lemon juice, red pepper flakes and 1/8 teaspoon each salt and pepper. Pulse until blended and finely chopped. Add the cilantro sprigs and pulse until cilantro is coarsely chopped.
  • Stir together the mayonnaise, Sriracha, lemon juice and a pinch of salt and pepper.

DEVILED HAMBURGERS

Deviled Hamburgers image

Might refer to this as a retro recipe. We had these on a regular basis growing up. Since I can't find anyone here in Virgina who knows what they are, it may be a Midwest thing. Mom said that you always served them at parties in the 50's & 60's because the boys liked them so much. They became legendary in my group of friends when Mom made them one evening for dinner. The guys kept asking where the tops to their burgers were to get under Mom's skin. It worked (she threatened to never cook for them again) and they still laugh about it today. Boys are rotten. We love them anyway. They did like the burgers! Note: You must use a lean ground beef or there is a tendency to end up with a soggy, greasy bun. Not good.

Time 15m

Yield 4 serving(s)

Number Of Ingredients 8

1 lb lean ground sirloin
1/3 cup chili sauce
1 1/2 teaspoons mustard
1 teaspoon onion, finely chopped
1 1/2 teaspoons Worcestershire sauce
1 teaspoon salt
pepper
4 hamburger buns, total of 8 bun halves (or 8 slices of bread)

Steps:

  • Combine all ingredients and mix.
  • Divide equal portions of mixture between the eight bun halves and spread on top.
  • Make sure to spread mixture out to the edge of the bun as any portion of the bun exposed to the broiler has a tendency to brown too much.
  • Place under the broiler for 6-8 minutes.

DEVIOUS DINERS DEVILISHLY DELICIOUS SOUTHWEST BURGER

Devious Diners Devilishly Delicious Southwest Burger image

This burger is posted for the Zaar World Tour Burger Challenge 2007. In honor of my teammates, the awesome and outstanding Devilishly Devious Diners, I would dedicate this recipe to the friends I have made! I found that it was better to grill the bison burger on top of foil to ensure the burger stays together. The amounts used for the toppings on each burger would depend on the individual. I think these burgers would be outstanding with Bergy's recipe for Recipe #44436

DEVILED BEEF HAMBURGER PATTIES

Deviled Beef Hamburger Patties image

My all-time favorite hamburger patty for making American style burgers. I found the original recipe in the Better Homes and Gardens Barbecue Book back in the 70's and this is the only recipe I ever use. It has been modified somewhat, but it retains most of the original ingredients. I always have a bottle of chili sauce in the refrigerator at all times for making these. Although you can perhaps substitute ketchup for chili sauce the taste will not be the same. You need to mix this meat mixture thoroughly. I use circular motion to get fat from ground beef and egg emulsified. The original recipe is for 4 hamburger patties but I usually make 5 patties because I like my patties smaller than quarter pounder.

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any mishaps.
  • Use a sharp knife: A sharp knife is essential for slicing and dicing your ingredients. It will help you get clean, even cuts and prevent your food from sticking to the knife.
  • Don't overcrowd the pan: When cooking the burgers, don't overcrowd the pan. This will prevent them from cooking evenly and will make them soggy.
  • Cook the burgers over medium heat: Cooking the burgers over medium heat will help them cook evenly without burning them.
  • Use a meat thermometer: To ensure that the burgers are cooked to perfection, use a meat thermometer. The internal temperature of the burgers should reach 160 degrees Fahrenheit.
  • Don't skip the toppings: The toppings are what really make the devil burgers special. Don't be afraid to experiment with different toppings to find your favorite combination.

Conclusion:

Devil burgers are a delicious and easy-to-make dish that is perfect for any occasion.
