2 cups graham cracker crumbs
⅓ cup butter, melted
16 oz cream cheese, at room temperature
¾ cup sugar
¼ cup milk
½ cup sour cream
2 tablespoons flour
3 teaspoons bourbon whiskey, divided
2 eggs
1 cup dark brown sugar
¼ cup cornstarch
½ teaspoon salt
4 egg yolks
⅔ cup maple syrup, or dark corn syrup
½ cup cream, warm to the touch
4 tablespoons butter, cold
2 cups roasted pecan, chopped

  • Preheat oven to 325°F (170°C).
  • In a bowl, combine the graham cracker crumbs and melted butter. Stir to combine.
  • Pour the mixture into a 9-inch (23 cm) springform pan and press it evenly into the bottom and halfway up the sides. Transfer to the refrigerator to chill.
  • In a large bowl add the cream cheese, sugar, and milk. With a hand mixer, beat until fluffy and fully incorporated.
  • Add in the sour cream, flour, 2 teaspoons of the bourbon, and the two eggs and gently continue to mix until the cream cheese filling is smooth.

KENTUCKY DERBY PIE

Each month our power company features a recipe and it comes in with the bill. This was the recipe this month and oh my goodness this is so so good and very easy. The recipe only made one pie and a deep dish at that. Well I didn't have a deep dish crust but I did have 2 regular so I made 1 1/2 of the recipe and it worked great....

Provided by Kathy Griffin

Categories     Pies

Time 55m

Number Of Ingredients 8

1 1/2 c sugar
1 c flour ( self rising)
3 eggs ( slightly beaten)
1 1/2 stick butter ( melted, and let cool down some)
1 1/2 c chopped pecans
1 1/2 c chocolate chips
1 1/2 tsp vanilla
2 unbaked 9 inch pie crust

Steps:

  • 1. Preheat oven to 325. In a medium bowl add flour and sugar and stir to mix.
  • 2. Add in eggs, and butter and stir to mix some, then add in pecans, chocolate chips and vanilla. Mix well
  • 3. Divide between the 2 pie shells and bake 45 minutes. Let cool before serving

Tips:

  • Use a quality chocolate. The better the chocolate, the better the pie will taste. Look for a chocolate with a high cocoa content (70% or higher) and a smooth, rich flavor.
  • Don't overmix the batter. Overmixing can make the pie tough. Mix the batter just until the ingredients are combined.
  • Bake the pie in a preheated oven. This will help the pie to bake evenly.
  • Let the pie cool completely before serving. This will allow the filling to set and the flavors to develop.

Conclusion:

Derby pie is a delicious and easy-to-make pie that is perfect for any occasion. With its rich chocolate flavor and creamy, nutty filling, it is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give Derby pie a try. You won't be disappointed!
