2 cups strong brewed coffee
1 ½ cups white sugar
½ cup butter
1 cup raisins
1 teaspoon ground allspice
1 teaspoon ground cinnamon
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, baking soda and baking powder. Set aside.
  • In a large saucepan combine the coffee, sugar, butter, raisins, allspice and cinnamon. Bring to a boil, remove from heat and set aside to cool to room temperature.
  • Stir in flour mixture until well combined. Pour into a 9x13 inch pan. Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of cake comes out clean.

1 cup shortening
2 cups water
2 cups raisins
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
½ teaspoon ground cloves
2 cups white sugar
3 cups all-purpose flour
1 teaspoon baking soda

Steps:

  • In a saucepan combine the shortening, water, raisins, cinnamon, nutmeg, allspice, cloves and sugar. Simmer for 10 minutes. Remove form heat and let stand until cool.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan.
  • Stir the flour and baking soda into the cooled raisin mixture and mix until just combined. Pour batter into the prepared pan.

1/2 cup shortening
2 cups dark raisins (or diced pitted prunes)
1 apple (peeled and shredded)
2 cups flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon clove
1 teaspoon nutmeg
1 cup nuts

Steps:

  • In a medium saucepan, simmer sugar, coffee, shortening, raisins and apple together for 10 minutes.

1 c sugar
1/2 tsp cinnamon
1 tsp pumpkin spice instant dry pudding (or allspice)
1 c warm water
1/2 c virgin coconut oil (or crisco softened)
1 3/4 c all purpose flour
1/2 tsp baking soda
3 medium apples, mcintosh, cored, peeled and sliced

Steps:

  • 1. Peel, core and slice apples to size you would put in a pie and set aside. Put all dry ingredients in medium bowl and then add softened coconut oil (Not melted)and warm water. Mix by hand vigorously til blended, but it will still be a little bit lumpy. Then add apples and fold in. Pour into oiled and floured 6X8 or 8X8 glass baking dish and bake in preheated 350 degree oven for about 35 to 40 minutes or until toothpick inserted in center comes out clean. Let cool for about 15 minutes or longer if you can but cut when still warm. Add Cool whip on top and enjoy.
