Categories     Cookies     Citrus     Dessert     Bake

Number Of Ingredients 8

2 cups sifted flour
½ cup sifted powdered sugar
1 cup butter or margarine
4 beaten eggs
2 cups granulated sugar
1/3 cup fresh! Lemon juice
¼ cup flour
½ tsp. Baking powder

Steps:

  • Sift together 2 cups flour and the powdered sugar. Cut in butter or margarine. Press into bottom of a 13x9x2 inch baking pan. Bake at 350 degrees 20 to 25 minutes or until lightly brown. Beat together eggs, granulated sugar and lemon juice. Sift together the ¼ cup flour and the baking powder. Stir into the egg mixture. Pour over the baked crust. Bake at 350 degrees for 25 minutes. Cool and cut into bars-makes 30. For any bar cookie if you line the pan with foil and butter it you can lift the cookies out when done and cut them neatly.

Tips:

  • Use fresh lemons: Fresh lemon juice and zest provide the best flavor for these bars. If you don't have fresh lemons, you can use bottled lemon juice, but the flavor will be less pronounced.
  • Don't overmix the batter: Overmixing the batter will make the bars tough. Mix just until the ingredients are combined.
  • Don't overbake the bars: The bars are done baking when the edges are golden brown and the center is set. If you overbake them, they will be dry and crumbly.
  • Chill the bars before cutting them: Chilling the bars for at least 30 minutes before cutting them will help them hold their shape better.
  • Store the bars in an airtight container: The bars can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week.

Conclusion:

These lemon bars are a classic dessert that is perfect for any occasion. They are easy to make, delicious, and always a crowd-pleaser. With a few simple tips, you can make sure your lemon bars turn out perfect every time. So next time you're looking for a sweet treat, give these lemon bars a try!
