2 cups cubed peeled potatoes
1 large carrot, sliced
2 celery ribs, chopped
3 cups water
2 cups cubed fully cooked ham
2 tablespoons chopped green pepper
2 teaspoons finely chopped onion
7 tablespoons butter, divided
3 tablespoons all-purpose flour
1-1/2 cups 2% milk
3/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup soft bread crumbs

Steps:

  • Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese and stir until melted. , Pour over ham mixture. Sprinkle with bread crumbs. 1 tbsp sunflower oil
1 tbsp butter
1 onion, chopped
2 leeks, thickly sliced
2 carrots, peeled and chopped
6 boneless, skinless chicken thighs, cut into chunky pieces
200ml cider
800ml hot chicken stock
½ bunch of thyme, tied
1 tbsp cornflour
150g ham hock or cooked gammon, shredded into chunky pieces
100g frozen peas
1 tbsp English or Dijon mustard
200g self-raising flour
¼ tsp baking powder
2 tbsp English mustard powder
100g suet or cold butter, grated
½ small bunch of parsley, finely chopped

Steps:

  • Heat the oil and butter in an ovenproof casserole over a medium heat. Add the onion, leeks and carrots and a pinch of salt, and fry gently for 10 mins until softened and translucent. Add the chicken, turn up the heat and fry for 5 mins. Pour in the cider, cook for 3 mins, then pour in the chicken stock and add the bunch of thyme. Bring to a simmer, season to taste, then reduce to a low heat and cover the pan. Cook for 30 mins.
  • Heat the oven to 180C/160C fan gas 4. Make the dumplings by mixing together the flour, baking powder, mustard powder, the suet or butter, parsley and ½ tsp salt. Swiftly mix in 8-10 tbsp of water and bring together with your hands. The dough should be firm and pliable. Divide into eight equal-sized pieces, weighing for accuracy if you like.
  • Remove the bunch of thyme from the stew and discard. Spoon a little of the liquid into a bowl and mix with the cornflour, then stir the mixture into the casserole. Add the ham hock, peas and mustard. Arrange the dumplings on top of the stew, then put in the oven, covered, for 30 mins. Remove the lid and cook for a further 10 mins until the dumplings are puffed up and golden brown. Serve in bowls. To freeze the stew, leave to cool completely, then transfer to a freezerproof container. Will keep for up to three months. Defrost thoroughly, then reheat until piping hot.

1 (8 ounce) box macaroni shells and cheese
1 (12 ounce) bag salad croutons (any flavor)
1 cup cooked sliced bacon, also crumpled
1 (8 ounce) container sour cream
1 cup ham, cut into small chunks

Steps:

  • pre heat oven to 350.
  • Remove liquid cheese pouch from shells and cheese box (set shell pasta aside) mix with sour cream and cottage cheese and ham. refrigerate.
  • fry enough bacon till it makes 1 cup when crumpled up.
  • boil water for elbow macaroni and shell pasta.
  • add both types of noodles and only cook till half of the cooking consistency of desired doneness.
  • once noodles are ready add to refrigerated mixture add the bacon and stir with spoon until well mixed.
  • In large baking pan laced your mixture evenly top with croutons and powdered cheese. place in oven until golden brown on top. around 25 to 30 minutes.
  • remove from oven. let stand 5 minutes before serving.
