EVEN A KID CAN DO IT PERFECT FRIED EGGS

Even a Kid Can Do It Perfect Fried Eggs image

My son has always been a breakfast food lover. He could eat it morning, noon, and night. When he was about 10, he wanted to learn to cook his favorites, but he just could not get the hang of frying eggs. They would always break or stick to the pan etc. So I came up with this easy way to make foolproof eggs. I had forgotten all about it--this was over 10 years ago. But when I recently went to his house to visit, he was cooking, and he still makes his eggs like this.

DELUXE FRIED EGGS

Deluxe Fried Eggs image

A simple and delicious way to transform fried eggs into a substantial one-dish brunch or snack dish. I read the basic idea for this recipe somewhere recently, then couldn't find it again, but I added to the original idea - which just had garlic sautéed in the oil before adding the eggs - when I made this for brunch yesterday. I used some wonderfully orange-yolked free range eggs which certainly added to the visual appeal! Everyone loved it, and I'll be making this again! The proportions used could, of course, easily be varied.

Yield Serves 4

Number Of Ingredients 12

6 tablespoons lard or cooking oil
2 eggs
1 teaspoon salt
2 scallions, chopped
1/2 cup fresh shrimp, shelled, deveined and diced
4 cups cold, cooked rice
1/2 cup cooked peas
1/4 cup canned diced bamboo shoots
1/4 cup diced boiled ham
1/2 cup diced cooked chicken
1/2 cup diced Chinese roast pork or left-over roast beef or veal
2 tablespoons soy sauce

Steps:

  • Heat 2 tablespoons lard or cooking oil. Beat eggs with 1/2 teaspoon salt and scramble in oil until firm, breaking into small pieces. Remove and reserve. Heat remaining oil. Add scallion and shrimp and remaining salt. Cook until shrimp shows pink. Break up lumps of cold cooked rice. Add to shrimp. Stir until rice is heated and the grains of rice are separated. Make a hole in the center of the rice. Add all the rest of the ingredients except soy sauce. Stir until thoroughly heated and mixed. Sprinkle soy sauce over rice and mix evenly through. Salt and pepper to taste. Garnish with additional chopped scallions if desired.

Tips:

  • Use fresh, high-quality eggs. This will result in a more flavorful and satisfying fried egg.
  • Heat your cooking oil or butter over medium heat. This will help to prevent the eggs from sticking to the pan and burning.
  • Crack the eggs into a bowl before cooking. This will make it easier to transfer them to the pan without breaking the yolks.
  • Season the eggs with salt and pepper before cooking. This will help to enhance their flavor.
  • Cook the eggs to your desired doneness. For a sunny-side up egg, cook for 2-3 minutes per side. For a over easy egg, cook for 3-4 minutes per side. For a hard-fried egg, cook for 4-5 minutes per side.
  • Serve the eggs immediately. Fried eggs are best enjoyed hot and fresh out of the pan.

Conclusion:

Fried eggs are a simple but delicious dish that can be enjoyed for breakfast, lunch, or dinner. With just a few simple ingredients and a little bit of time, you can create a perfect fried egg that is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give fried eggs a try. You won't be disappointed!
