2 lbs ground beef
1 large onion, coarsely chopped
1 small green pepper, coarsely chopped
3 (15 ounce) cans red kidney beans
1 (15 ounce) can tomato sauce
2 minced garlic cloves
1/4 teaspoon italian seasoning
3 tablespoons chili powder
1 1/2 tablespoons ground cumin
salt
pepper

Steps:

  • Put meat, onion, and pepper in a 3 qt or larger pan. Salt and pepper to taste. Break meat up and cook over medium heat, stirring occasionally, until meat is evenly browned; drain. Add beans, tomato sauce, garlic and seasoning.
  • Simmer uncovered for about 30 to 45 minutes, stirring occasionally.

1 lb ground beef
1 onion (diced)
1 green bell pepper (diced)
2 tablespoons butter
1/2 tablespoon salt
1/2 teaspoon pepper
3 (8 ounce) cans tomato sauce
4 (16 ounce) cans of busch's chili beans
1 (14 1/2 ounce) can diced tomatoes
1 (46 ounce) can tomato juice
1 bay leaf
1/2 teaspoon chili powder
5 dashes Tabasco sauce (more or less depending on how spicy you like it)
1/4 teaspoon paprika
1 teaspoon Worcestershire sauce

Steps:

  • Cook ground beef until brown in a skillet.
  • While beef is cooking sweat the onion, garlic, and green bell pepper in the pot you plan to make the chili inches.
  • Drain ground beef.
  • Add beef into the pan with the garlic, onion, and green bell pepper.
  • Stir until combined.
  • Season the mixture with the salt and pepper.
  • Cook mixture for 2 minutes.
  • Add the tomato sauce, chili beans, diced tomatoes, and tomato juice into the pot.
  • Stir until combined.

  • Stir until combined.

4 cloves garlic, chopped
2 large onions, chopped
1 kilogram (2 1/4 pounds) leftover smoked brisket, cut into 2-centimeter (3/4-inch) cubes
4 tablespoons Chili Seasoning, recipe follows
2 tablespoons tomato paste
Two 400-gram (14-ounce) cans chopped tomatoes
2 shots (6 tablespoons) bourbon, plus more if desired
6 tablespoons molasses
Two 400-gram (14-ounce) cans kidney beans, drained
500 to 750 milliliters (17 to 25 ounces) beef or chicken stock
Salt and freshly ground black pepper

2 tablespoons ground cumin

Steps:

  • Set up a barbecue for indirect cooking to 110 degrees C (225 degrees F).
  • Melt the butter in a large cast-iron pan set over medium heat on the stovetop. Add in the garlic and onions and cook, stirring often, until softened, 5 minutes. Add the brisket and the Chili Seasoning and stir until the meat is coated in the spice mix.
  • Add the tomato paste and chopped tomatoes, stir well, and bring almost to a boil. Reduce the heat and stir in the bourbon, molasses and beans, then add 500 milliliters (17 ounces) of the stock and some salt and pepper.
  • Cover the pan with a lid and place it on the barbecue. Cook for 1 hour, and then check and adjust the seasoning and the chili heat. It's better to adjust the seasoning at this point, rather than just before serving. Cook for another 5 hours or so, stirring occasionally and adding more stock when needed.
  • The chili is done when it looks like a rich, glossy sauce with melt-in-your-mouth meat that is still in identifiable hunks. Serve the chili topped with sour cream and pickles.
  • In a small bowl, mix the chipotle, cumin, chiles, cocoa, coriander, oregano, smoked salt, sugar, cinnamon, paprika, smoked paprika and black pepper. Store in an airtight container.

2 cups chopped yellow onions
1 tablespoon minced garlic
2 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon Emeril's Creole Seasoning (sold in supermarkets) or other Creole seasoning
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/2 pounds ground beef, preferably 80% lean
1 (14.5-ounce) can peeled whole tomatoes, undrained
2 tablespoons tomato paste
1 teaspoon light brown sugar
2 cups beef stock or low-sodium beef broth

Steps:

  • In a heavy-bottomed 6-quart pot, heat the oil over medium-high heat. Add the onions, garlic, chili powder, cumin, Creole seasoning, salt, and pepper, and cook, stirring, until the onions are softened, about 4 minutes. Add the beef and cook, stirring, until the meat is brown and cooked through, about 5 minutes, breaking up any clumps. Spoon off and discard the rendered fat.
  • Crush the tomatoes with your hands and add them to the pot along with their juices. Add the tomato paste, brown sugar, and stock; stir well and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, until thickened, 50 to 55 minutes. Keep warm until ready to serve.
