DELICIOUS AND SPICY 'WHO NEEDS MEAT' VEGETARIAN TACO CASSEROLE

Delicious and Spicy 'who Needs Meat' Vegetarian Taco Casserole image

One day, I was craving for mexican food but I had a vegetarian friend over for dinner, so I decided to experiment with a vegetarian take on my favorite taco casserole dish, which turned out, to my surprise, even better than the original! Instead of using tortilla chips, you can also just scoop some of the casserole in a soft taco, this is actually really good as well, especially when served with some guacemole!

Time 50m

Number Of Ingredients 9

2 c chicken broth
1/4 c all purpose flour
1 pkg (1.25 ounces) taco spices & seasonings
1 lb lean ground beef
1 c sour cream
1 can(s) (7 oz) diced green chiles
1 pkg ( 11 oz) corn or tortilla chips
2 c (8 oz) grated monterey jack or cheddar cheese
1 c sliced green onions with tops

Steps:

  • 1. Gather your ingredients:
  • 2. In a medium skillet, brown the meat and stir till crumbly. Drain the fat. Add the taco spices, blend well.
  • 3. In a small bowl, combine the broth and flour. Add to the meat mixture; bring to a boil to slightly thicken liquid. Stir in sour cream and chiles; blend well.
  • 4. In 13 x 9 x 2 inch lightly greased baking dish, place half of the chips. Top with 1/2 of the beef mixture, 1/2 of the cheese, and half of the green onions. Layer again, ending with the green onions.
  • 5. Bake uncovered, in a 375 degree oven for 25-30 minutes. Let stand 5 minutes before cutting.
  • 6. When I make a double batch of this, it works nicely in an aluminum, throw away roaster. If you make this for a party, I would suggest you double the batch; you won't have any left..Seriously! And naturally you would bake it longer. I baked mine until the cheese is golden brown.. Serve with a dollop of sour cream and salsa.
  • 7. I wanted to update this with the chicken version I made tonight.Instead of ground beef, I coarsely ground 1 pound of chicken breasts in my food processor. I also was out of green onions, so I chopped about 1/2 cup of onions and browned in with the chicken...I topped it with red jalapeno slices..So the illustrated pics that you see are for the chicken version...

Tips:

  • Use fresh, high-quality ingredients: This will make a big difference in the flavor of your casserole.
  • Don't overcook the meat: Ground beef can easily become dry and tough if it's overcooked. Cook it just until it's browned through.
  • Use a variety of spices: This will give your casserole a complex and flavorful taste. Chili powder, cumin, and oregano are all classic Mexican spices that work well in this dish.
  • Don't be afraid to experiment: There are many different ways to make a taco casserole. Feel free to add your own favorite ingredients or change up the spices to suit your taste.
  • Serve with your favorite toppings: Taco casserole is a great dish to serve with a variety of toppings. Sour cream, guacamole, salsa, and shredded cheese are all popular choices.

Conclusion:

Taco casserole is a delicious and easy-to-make dish that's perfect for busy weeknights. It's also a great way to use up leftover taco meat. With a few simple ingredients and a little bit of time, you can have a delicious and satisfying meal that the whole family will love.
