This is a simple and very tasty potato salad. It looks great with all the green in it. There's never any left over when I serve it. This recipe can easily be doubled for a party.

2 1/2 lbs russet potatoes
3/4 cup mayonnaise
3/4 cup dill pickle, diced
4 scallions, sliced, use all of it (green onions)
1/4 cup fresh parsley, chopped
1/2 teaspoon salt (I use Aunt Jane's crazy mixed up salt)
1/2 teaspoon pepper

Steps:

  • Peel and cube potatoes. Boil until just tender.
  • Mix all other ingredients in a medium size bowl.
  • Drain cooked potatoes and let cool completely.
  • Mix potatoes into mayonnaise mixture.
  • Serve or refrigerate until ready to serve. It tastes best if you refrigerate it at least 4 hours, so that flavors meld.

8 potatoes
12 slices bacon
2 onions, finely chopped
1 cup sliced mushrooms
1 cup heavy cream
½ cup milk
1 ½ cups shredded mozzarella cheese
salt and pepper to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter or grease one 8x16 inch baking dish.
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Add onions, mushrooms, salt and pepper. Cook until onions and mushrooms are soft.
  • Slice potatoes and place a thin layer in the baking dish. Follow with a layer of the bacon mixture and repeat layers until all ingredients are used. Pour cream and milk over layers; sprinkle with grated cheese.
  • Bake for approximately 35 minutes, or until cream and milk have almost reduced completely.

4 large red potatoes
1 medium onion
1 cup garlic mayonnaise (Garlic Mayo (Ali Oli))
1 tablespoon red wine vinegar
1 (6 ounce) can tuna (I like fillet in olive oil)
1 (14 ounce) can peas, drained or 1/4 cup frozen peas
1 (14 ounce) can cubed carrots, drained
2 hard-boiled eggs, one chopped, one sliced for garnish
1 roasted red pepper, chopped, reserve some for garnish
1/2 lb cooked shrimp, reserve some for garnish
1/4 cup chopped olive, reserve a few for garnish
1 cup lettuce, sliced very thinly
salt and pepper

Steps:

  • Boil potatoes, skin on, until cooked through, about 20 minutes, or until fork tender.
  • Allow to cool enough to touch and peel.
  • Dice potatoes.
  • In a large bowl, toss in shrimp, tuna, chopped egg and vegetables lightly.
  • Whisk garlic mayo salt, pepper and vinegar together.
  • Fold 1/2 cup into salad, a little more if it looks dry.
  • Spread salad into a shallow dish (I usually use a casserole dish).
  • Spread remaining garlic mayo over salad, and garnish around the edges with the lettuce, and in the center with reserved ingredients.
  • Allow to chill in refrigerator while flavors meld.
  • This can be made a few days before, just garnish the salad the same day, using freshly chopped lettuce.

3-4 pounds cooked, peeled and diced small potatoes ( red is best)
4-5 green onions diced 3/4ths up stems
1/3 cup celery (diced small)
7 lrg hard boiled eggs - cooled/ peeled/diced small , leaving 1 egg for garnish
1/2 teaspoon yellow mustard
1 to 1 1/4 cup hellmann's mayonnaise
approx 1/2 cup milk ( of your choice)
dash or two of garlic powder (optional)
salt/pepper to taste
(celery leaves, parsely leaves or chives for garnish)
paprika for final garnish and color

Steps:

  • 1. In large mixing / serving bowl, add diced potatoes, diced eggs, onion, celery, optional garlic powder, salt/ pepper. In seperate small bowl, whisk together, mayonnaise, mustard, milk until smooth and creamy . ( you may need to add a bit more mayo and milk, depending on you how creamy you like it) Pour mayo mixture, Pour over potatoes. Mix gently but thoroughly. Keep cold in refrigerator until ready to garnish top and serve. Gently give potato salad a final mixing , top salad with thinly sliced egg slices, adding celery leaves (or fresh parsley, chives) around top for garnish. Lightly sprinkle with paprika. Return to refrigerator until time to serve.
  • 2. Note: wipe clean rim of serving bowl for nicer serving appearance.

10 med-sm yukon gold potatoes
6 eggs, hard boiled
8 slice bacon
1/2 red onion, diced
1 c sweet pepper relish
1 c miracle whip
1/2 c kraft mayo
1 tsp mustard
1 tsp black pepper
INSTEAD OF SWEET PEPPER RELISH USE:
1/2 c sweet pickle relish
1 red bell pepper, roasted and chopped

Steps:

  • 1. Wash potatoes and boil, no need to peel. Once cool enough to handle, smash or dice.
  • 2. Boil eggs, peel and dice.
  • 3. Cook bacon and crumble.
  • 4. I used Uncle Gary's Sweet Pepper relish. It added a small amount of heat and sweet. If using sweet pickle relish instead, roast a red bell pepper, remove skin and chop.
  • 5. The amount of Miracle whip and mayo will depend on the amount of potatoes you use. I always use half the amount of mayo as I do Miracle Whip, as per my family's preference. Mix Miracle Whip, Mayo, mustard and black pepper together.
  • 6. Place smashed potatoes, diced eggs, diced onion, crumbled bacon in a large bowl and mix to combine. Now add mayo and sweet pepper relish, mix to combine. Server warm or cold.
