- Preheat oven to 325 degrees F (165 degrees C). Butter or grease one 8x16 inch baking dish.
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Add onions, mushrooms, salt and pepper. Cook until onions and mushrooms are soft.

- Boil potatoes, skin on, until cooked through, about 20 minutes, or until fork tender.
- Allow to cool enough to touch and peel.
- Dice potatoes.
- In a large bowl, toss in shrimp, tuna, chopped egg and vegetables lightly.
- Whisk garlic mayo salt, pepper and vinegar together.
- Fold 1/2 cup into salad, a little more if it looks dry.
- Spread salad into a shallow dish (I usually use a casserole dish).
- Spread remaining garlic mayo over salad, and garnish around the edges with the lettuce, and in the center with reserved ingredients.
- Allow to chill in refrigerator while flavors meld.

- 1. In large mixing / serving bowl, add diced potatoes, diced eggs, onion, celery, optional garlic powder, salt/ pepper. In seperate small bowl, whisk together, mayonnaise, mustard, milk until smooth and creamy . ( you may need to add a bit more mayo and milk, depending on you how creamy you like it) Pour mayo mixture, Pour over potatoes. Mix gently but thoroughly. Keep cold in refrigerator until ready to garnish top and serve. Gently give potato salad a final mixing , top salad with thinly sliced egg slices, adding celery leaves (or fresh parsley, chives) around top for garnish. Lightly sprinkle with paprika. - 1. Wash potatoes and boil, no need to peel. Once cool enough to handle, smash or dice.

- 4. I used Uncle Gary's Sweet Pepper relish. It added a small amount of heat and sweet. If using sweet pickle relish instead, roast a red bell pepper, remove skin and chop.
- 5. The amount of Miracle whip and mayo will depend on the amount of potatoes you use. I always use half the amount of mayo as I do Miracle Whip, as per my family's preference. Mix Miracle Whip, Mayo, mustard and black pepper together.
- 6. Place smashed potatoes, diced eggs, diced onion, crumbled bacon in a large bowl and mix to combine. Now add mayo and sweet pepper relish, mix to combine. Server warm or cold.
