DELICIOUS OVEN BAKED ROSEMARY & GARLIC FRIES / CHIPS

Delicious Oven Baked Rosemary & Garlic Fries / Chips image

This is a recipe I kind of just discovered one day and it is now a firm family favourite in our house, I also make roast potatoes the same way - delicious!!! Be careful not to set the over too high and watch the amount of oil you put in, I have been thinking about using a spray oil but haven't yet tried it, perhaps you can and let me know how they turn out!!! Also, you can use dried herbs but I prefer fresh as I grow my own and they taste so much better, you can also use a different strength of olive oil if you wish, but I prefer extra virgin. I wouldn't recommend using anything other than olive oil mind you, it adds to the flavour! I also like to add a little bit of BBQ seasoning to mine but this is optional, if you want it, add it before cooking...

Number Of Ingredients 5

2 large potatoes
3 sprigs fresh rosemary
2 sprigs fresh thyme

  • Slice the potatoes into fries (chips for those in the UK!) LEAVE THE SKINS ON! Then, rinse under cold water and leave to drain on one side.
  • Pull leaves off of thyme and rosemary and discard stalks.
  • Slice and chop garlic cloves.
  • Slice up thyme and rosemary a little to release the flavours.
  • Add a couple of tablespoons of oil to a roasting dish and place in the over for 5 minutes to heat.
  • Once heated, pop the fries into the rosting pan and drizzle a bit more oil over, and sprinkle the herbs and garlic over before shaking to coat nice and evenly.
  • Pop back in the over, at the top of the oven for about 25-30 mins, checking every 10 minutes and shaking to coat.
  • Drain them on kitchen towel before serving.

DELICIOUS OVEN FRIES

This recipe is healthy and tasty. Great for people watching cholesterol and heart. Got it from a cookbook at a bookstore. Prepare these at least a couple hours ahead of time. NOTE: You can also put a tablespoon of liquid smoke (any flavor will do and found in BBQ sauces section) and also Vegeta (found in delis or foreign food section). Before chilling it takes about 10 minutes to peel the potatoes that is if you want to, and if you keep the skin on there will be more time for you. The only part that takes time is chilling the potato strips for 1 hour. Cooking is about 35 minutes.

Time 1h35m

Yield 8-10 serving(s)

Number Of Ingredients 8

4 large potatoes, you can peel skin off and keep (2 lbs)
8 cups ice water
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1 teaspoon white pepper
1/4 teaspoon allspice
1 teaspoon vegetable oil or 1 teaspoon olive oil

Steps:

  • Scrub potatoes.
  • Cut in 1/2 inch strips.
  • Place the potato strips into 8 cups ice water, cover, and chill for 1 hour or longer.
  • Remove potato strips, dry thoroughly with paper towels.
  • Place all of the spices above in a plastic bag and mix with your hand, or close the bag and shake it if you prefer.
  • Get the potato strips in a bowl and put in your oil and mix well so they are coated.
  • Then put them in the spiced bag and coat also.
  • Place the potatoes in a nonstick shallow pan.
  • Cover with aluminum foil.
  • Turn to 475° for 15 minutes.
  • Remove the foil, turn the fries over, and bake an additional 15-20 minutes extra at 475°.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for oven fries because they are starchy and have a high solids content, which means they will crisp up nicely in the oven.
  • Cut the potatoes evenly: This will help them cook evenly.
  • Soak the potatoes in water: This will help to remove excess starch, which will also help them crisp up.
  • Toss the potatoes with oil and seasonings: This will help them to brown and flavor evenly.
  • Spread the potatoes in a single layer on a baking sheet: This will help them to cook evenly and prevent them from steaming.
  • Bake the potatoes at a high temperature: This will help them to crisp up quickly.
  • Flip the potatoes halfway through cooking: This will help them to cook evenly.
  • Serve the potatoes hot: Oven fries are best served hot and crispy.

Conclusion:

Oven fries are a delicious and easy side dish that can be enjoyed by people of all ages. They are perfect for parties, potlucks, and everyday meals. With the right tips and techniques, you can make oven fries that are crispy on the outside and fluffy on the inside. So next time you are looking for a quick and easy side dish, give oven fries a try. You won't be disappointed!
