A friend made this saucy chicken for us when we had our first child. I pared down the recipe to make it lower in fat and calories. Now it's a family favorite, and even the kids ask for this baked bbq chicken breast. -Marge Wagner, Roselle, Illinois

DELICIOUS OVEN-BARBECUED CHICKEN THIGHS

Delicious Oven-Barbecued Chicken Thighs image

I love barbecue chicken and I love this way of baking it in the oven during the winter. I like to use chicken thighs, but you could use chicken breasts as well if you prefer those.

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 12

2 -3 lbs boneless skinless chicken thighs
3 tablespoons butter
1 medium sweet onion, finely chopped
1 tablespoon garlic powder or 1 tablespoon fresh minced garlic
3/4 cup ketchup
1/2 cup water
1 tablespoon apple cider vinegar
1 teaspoon lemon juice
4 tablespoons brown sugar
1 tablespoon buffalo wing sauce
1 1/2 tablespoons Worcestershire sauce
2 tablespoons prepared mustard

Steps:

  • Preheat oven to 375 degrees F.

Tips:

  • Choose the right chicken: For the best results, use a whole chicken that is between 3 and 4 pounds. A larger chicken will take longer to cook and may not cook evenly.
  • Prepare the chicken: Rinse the chicken inside and out and pat it dry with paper towels. Remove any excess fat or skin, and truss the chicken if desired.
  • Make the barbecue sauce: Combine all of the ingredients for the barbecue sauce in a saucepan and bring to a simmer over medium heat. Reduce the heat to low and simmer for 15 minutes, or until the sauce has thickened.
  • Preheat the oven: Preheat your oven to 350 degrees Fahrenheit.
  • Roast the chicken: Place the chicken in a roasting pan and brush it with the barbecue sauce. Roast the chicken for 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit. Baste the chicken with the barbecue sauce every 20 minutes or so to keep it moist.
  • Let the chicken rest: Remove the chicken from the oven and let it rest for 10 minutes before carving and serving.

Conclusion:

This oven-barbecued chicken is a delicious and easy-to-make meal that is perfect for any occasion. The chicken is moist and flavorful, and the barbecue sauce is tangy and sweet. Serve this chicken with your favorite sides, such as mashed potatoes, roasted vegetables, or coleslaw.
