Nonstick cooking spray, for coating the cake pan
Flour for dusting the cake pan
1 package (18.25 ounces) spice cake mix
1 cup canned pumpkin puree, NOT pumpkin pie mix
1/4 cup canola oil
3/4 cup water
3 extra large eggs
1 teaspoon cinnamon
Confectioners sugar for dusting on top

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350F degrees. Lightly mist a 12-cup Bundt pan with nonstick cooking spray and then dust it with flour.
  • Place the cake mix, pumpkin, oil, water, eggs and cinnamon in a large mixing bowl. Beat with an electric mixer on low speed until the ingredients are blended together, about 30 seconds.
  • Stop and scrape down the sides of the bowl with a rubber spatula.
  • Beat the mixture on medium speed for another 1 - 2 minutes longer, until the batter is smooth and thick.
  • Pour the batter into the prepared Bundt pan and smooth out the top with the rubber spatula.
  • Bake the cake until the top springs back when you press it lightly with a finger, 42 to 48 minutes.
  • Remove the pan from the oven and place it on a wire rack to cool for 10 to 15 minutes.
  • Run a long, sharp knife around the edges of the cake and shake the pan gently to loosen it. Invert the cake onto a wire rack.
  • Let the cake cool completely, about 30 minutes more.
  • Sprinkle with confectioner's sugar or drizzle with a little caramel sauce, if desired

  • Line a 15x10x1-in. baking pan with waxed paper. Coat the paper with cooking spray; set aside. In a large bowl, beat eggs for 3 minutes. 1 teaspoon allspice

I'm pretty lazy but also like low fat food. I made it up using spice cake mix so I don't have to worry about baking powder, spices, etc, and I leave out the oil. Use less water but the same number of eggs per the box. My husband likes this with cream cheese frosting (not so low fat unfortunately), and it is fast to make. It is a little dense in consistency. I used 8 inch round pans and so the times below are for that size (i.e. follow temperature & times according to box). I have also tried it with apple instead of pumpkin.

18 ounces canned pumpkin (plain pumpkin)
3 eggs (or whatever the box says to use)

1 cup graham cracker crumbs
2 tablespoons graham cracker crumbs
3 tablespoons apple jelly
4 (8 ounce) packages fat free cream cheese, softened
1 cup brown sugar, firmly packed
2/3 cup sugar
5 eggs
1/4 cup all-purpose flour
3 teaspoons pumpkin pie spice
1 (15 ounce) can pumpkin

Steps:

  • Heat oven to 350 degrees F.
  • Spray a 9 inch springform pan with nonstick cooking spray. Coat sides only with 2 tablespoons of graham cracker crumbs.
  • In a medium bowl combine remaining 1 cup graham cracker crumbs and apple jelly, mix well. Press in bottom of coated pan.
  • Bake at 350 degrees F for 8-10 minutes or until set. Cool 5 minutes. Refrigerate for 5 minutes or until completely cooled.

  • Bake at 350 degrees F for one hour 20 minutes - one hour 30 minutes or until center is set. Turn the oven off, open oven door at least 4 inches. Let cheesecake sit in the oven for 30 minutes.
  • With sharp knife, loosen cheesecake from sides of pan. Cool in pan for 2 hours.
  • To serve, cut cheesecake into wedges. Top with whipped topping and nutmeg if desired.
