2 cups self rising flour
2 cups granulated sugar
2 cups vegetable oil
2 (4 ounce) jars plum baby food
3 eggs
2 teaspoons cinnamon
1 teaspoon clove
1 teaspoon nutmeg
1 teaspoon butter flavoring
1 teaspoon vanilla flavoring
1 teaspoon almond flavoring (can be omitted if there is a nut allergy)

Steps:

  • Preheat oven to 350.
  • Mix all ingredients together in a mixer, beat well. (About 3 minutes).
  • Pour in a well greased bunt or tube pan.
  • Bake at 350 for 65 minutes or until a toopick comes out clean.
  • Cool.

4 medium firm bananas, sliced
1 loaf-shaped angel food cake (10-1/2 ounces), cut into 1-inch cubes
3 cups cold fat-free milk
2 packages (1 ounce each) sugar-free instant vanilla pudding mix
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
1/3 cup chopped pecans, toasted

  • Place the pineapple in a large bowl; gently fold in bananas. Place cake cubes in a 13x9-in. dish. Spoon fruit over cake. , In another large bowl, whisk milk and pudding mixes for 2 minutes. And because there's no oil or eggs they are a healthy alternative to your typical cupcake. Make sure to use pure pumpkin and not pumpkin pie filling! You could also add chocolate chips, nuts, etc. to pep these up a little.

It is always a crowd pleaser and it is a breeze to prepare in the food processor. If you don't have a food processor, you can easily do the chopping and mixing by hand. You can also make it a day ahead and refrigerate until you are ready to bake. A double batch will fit in a standard food processor.

1 small onion (about 1/2 c finely chopped)
1 (13 3/4 ounce) can artichoke hearts, drained
1 tablespoon lemon juice
1 cup grated parmesan cheese
1/4-1/2 teaspoon ground black pepper
2/3 cup light mayonnaise
1/3 cup heavy cream
1 French baguette, thin sliced

Steps:

  • Preheat oven to 400 degrees F.
  • Coarsely chop the onion in the food processor.
  • Add drained artichoke hearts. Coarsely chop (on pulse). Don't over chop. (Over chopping will make the dip thin and watery.).
  • Add lemon juice, parmesan cheese, mayonnaise, cream and pepper. Briefly pulse processor to mix or mix with the spatula. Don't over chop.
  • Spoon into an ovenproof casserole. You may refrigerate it (covered) for a day or so until you are ready to bake it.
