Steps:
- Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. This is when nuts love to burn.) Transfer to a cutting board and roughly chop.
- Place the sliced onions in a bowl and cover with cold water. Let sit while you prepare the rest of the salad (this keeps their flavor but removes the harsh onion bite).
- Prepare the dressing: In small mixing bowl or large liquid measuring cup, whisk together all of the dressing ingredients-vinegar, oil, poppy seeds, honey, mustard, salt, and pepper-until well combined. (Alternatively, you can shake the ingredients together in a mason jar with a tight-fitting lid).
- Assemble the salad: Place the spinach in a great big serving bowl. Add the strawberries. Drain the red onion and add it as well. Drizzle about half of the dressing over the salad and toss to coat the leaves. Assess the amount of dressing. You want the spinach leaves to be nicely moistened but not swimming in dressing. Add a little more if needed to suit your preferences. Add the feta and pecans. Toss lightly to combine. Serve immediately, with extra dressing on the side as desired.

DELICIOUS EASY SPINACH AND STRAWBERRY SALAD WITH FETA
This is a simple salad to put together but big on flavor! --- you can also make this using salad greens mixed with fresh spinach, I just purchase a smaller bag of prewashed spinach for this, prep time does not include washing and drying the fresh spinach, all salad ingredients may be adjusted to taste --- you will love this salad!

SPINACH AND STRAWBERRY SALAD WITH FETA CHEESE
Besides the variations on the dressing, I added feta cheese to the salad. It was scrumptious! Even spinach haters ate it up! I made this for a party and there were a lot more servings as a buffet item than 8.

Steps:
- Remove stems from Baby Spinach.
- Wash, hull, halve and slice Strawberries.
- Thinly slice Red Onion.
- Crumble Feta.
- Combine in a mixing bowl. Set aside.
- In a blender, or small bowl, combine Extra Virgin Olive Oil and Raspberry Balsamic Vinegar. I use a 2 to 1 ratio, most recipes I have read call for more olive oil and less vinegar than what I use. Mix according to your own taste. Blend for 15 seconds or whisk together.
- Pour dressing over salad and toss. You only need enough dressing to thinly coat everything. If you have extra in the bottom of the bowl leave it there lifting salad out with tongs. Drizzle any extra on a slice of crusty bread to eat with your salad.
- Plate and top with fresh ground white pepper and basil blossoms.
Tips:
- For the freshest flavor, use ripe, in-season strawberries. If strawberries are not in season, you can use frozen or dried strawberries instead.
- Spinach is a great source of iron, folate, and vitamin K. If you don't like spinach, you can substitute another leafy green, such as arugula or kale.
- Feta cheese adds a salty, tangy flavor to the salad. If you don't like feta, you can substitute another cheese, such as goat cheese or blue cheese.
- Homemade salad dressing is always best. This recipe uses a simple vinaigrette dressing made with olive oil, balsamic vinegar, and Dijon mustard. You can adjust the proportions of the dressing to taste.
- This salad is best served fresh. However, you can store the leftovers in an airtight container in the refrigerator for up to 2 days.
Conclusion:
This spinach and strawberry salad with feta is a delicious and easy way to get your daily dose of fruits and vegetables. It's perfect for a light lunch or dinner, and it's also a great side dish for grilled chicken or fish. With its vibrant colors and flavors, this salad is sure to please everyone at your table.
