2 1/2 cups flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup butter
1 cup sugar
1 teaspoon pure vanilla extract
1 egg
2 tablespoons milk
extra sugar, for flattening cookies

Steps:

  • Pre-heat oven to 350.
  • Sift together flour, salt and baking soda.
  • Using an electric mixer, cream butter and sugar in a large bowl until light and fluffy.
  • Beat in vanilla and egg.
  • Add flour mixture and beat until smooth.
  • Blend in milk.
  • Drop by teaspoon about 3 inches apart onto greased baking sheets.
  • Flatten with bottom of glass that has been dipped in sugar (I do this twice).
  • Bake in 350-degree oven about 8 minutes or until edges are lightly browned. Cool on rack.

2 cups all-purpose flour, plus more for rolling
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Assorted candies, sprinkles, or colored sugars, for decorating (optional)
1 1/2 cup confectioners' sugar
3-4 tablespoons milk, water, or lemon juice

Steps:

  • In large bowl, whisk flour, baking powder, and salt. With an electric mixer, cream butter and sugar until light and fluffy. Beat in egg and vanilla. With mixer on low, gradually add flour mixture; beat until combined. Divide dough in half; flatten into disks. Wrap each in plastic; freeze until firm, at least 20 minutes, or place in a resealable plastic bag, and freeze up to 3 months (thaw in refrigerator overnight).

  • Bake, rotating halfway through, until edges are golden, 10 to 18 minutes (depending on size). Cool completely on wire racks. To ice cookies, spread with the back of a spoon. Let the icing harden, about 20 minutes. Decorate as desired.
  • For the icing, sift confectioners' sugar into a small bowl. Whisk in milk, water, or lemon juice, 1 tablespoon at a time, until smooth and thick enough to coat the back of a spoon. If too thin, whisk in more sugar; if too thick, add more liquid. Spread over cookies with back of a spoon. Add other decorations, if desired. Let the icing harden, about 20 minutes.

Steps:

  • Preheat the oven to 350 degrees F (see note). Line two large, rimmed baking sheets with parchment paper and lightly grease with cooking spray.
  • In the bowl of an electric stand mixer fitted with the paddle attachment or in a large bowl with a handheld electric mixer, cream together the butter and granulated sugar until lightly and fluffy, 3-4 minutes. Scrape down the sides of the bowl as needed.
  • Add the egg and vanilla and mix again for 1-2 minutes until the batter lightens in color. Scrape the sides of the bowl as needed.
  • In another bowl, whisk together the flour, baking powder, baking soda and salt.
  • Add the dry ingredients to the wet ingredients and mix until combined.
  • Scoop the cookie dough into rounded balls (about 2 tablespoons in size; I use my #40 cookie scoop), roll in granulated sugar or sprinkles and place on the prepared baking sheets a couple inches apart (about 12 cookies per baking sheet).
  • Bake for 11-13 minutes until slightly crackly on top (but not much color around the edges or bottom to keep them soft and chewy).
  • Let the cookies cool for a few minutes on the baking sheet before removing to a cooling rack to cool completely.
