Time 50m

Yield 10-12 serving(s)

Number Of Ingredients 7

10 large baking potatoes, peeled, cooked and mashed
1 (8 ounce) package cream cheese
1 cup sour cream
1/2 teaspoon garlic salt
chives, finely chopped
paprika
butter, to taste

Steps:

  • Combine all the ingredients, except paprika and butter.
  • Beat until fluffy.
  • Place in a greased casserole dish.
  • Top with butter and sprinkle with paprika and refrigerate until ready to bake.
  • Bake at 350 degrees for 25-30 minutes.

Tips:

  • For a creamy mashed potato casserole, use Yukon Gold or Russet potatoes. These varieties are known for their smooth, fluffy texture.
  • To prevent the potatoes from becoming watery, drain them thoroughly after boiling.
  • Use a potato ricer or food mill to get the smoothest mashed potatoes. If you don't have either of these tools, you can use a hand mixer or electric mixer on low speed.
  • Be careful not to overmix the mashed potatoes, as this can make them gluey.
  • Season the mashed potatoes to taste with salt, pepper, garlic powder, and onion powder. You can also add other herbs and spices, such as rosemary, thyme, or sage.
  • For a cheesy mashed potato casserole, add shredded cheddar cheese, Parmesan cheese, or Gruyère cheese to the mashed potatoes.
  • For a crunchy topping, sprinkle the top of the casserole with bread crumbs, crushed potato chips, or grated Parmesan cheese before baking.
  • Bake the mashed potato casserole until it is heated through and the top is golden brown.
