Dee's Baked Goulash is a hearty and comforting dish that is perfect for a cold winter night. It is made with ground beef, elbow macaroni, and a variety of vegetables, all simmered in a rich tomato sauce. The goulash is then topped with a layer of melted cheese and baked until bubbly. This recipe is easy to follow and can be made in just one pot. It is also a great way to use up leftover ground beef.
In addition to the classic baked goulash recipe, the article also includes two variations: a slow cooker goulash and a vegetarian goulash. The slow cooker goulash is a great option for busy weeknights, as it can be cooked on low all day. The vegetarian goulash is a hearty and flavorful dish that is perfect for meatless Mondays.
No matter which recipe you choose, you are sure to enjoy this delicious and comforting dish. It is a perfect meal for a family dinner or a potluck.
GOULASH
Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

Steps:
- Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
- Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
- Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
- Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.

Steps:
- 1. Brown and drain ground beef in a large sauce pan. Add beef back to pan and the rest of the sauce ingredients. Bring to boil then lower heat and simmer for at least one hour. While sauce is cooking bring a pot of water to boil and cook noodles al dente right before sauce is done. Drain noodles and add sauce to noodles until it's the consistency you want. I make mine pretty saucy since baking dries it out a bit.
- 2. Assemble casserole. Layer of pasta. Then half your cheese. Then another layer of pasta. Then add the rest of your cheese. Sometimes I add crushed up potato chips to the top for a little crunch. Bake at 350 for about 40 minutes. I like my cheese nice and browned and bubbly.
Tips:
- To ensure even cooking, cut the beef into uniform cubes and brown them in batches.
- Drain the excess fat from the browned beef and onions to reduce the greasiness of the dish.
- Use a variety of vegetables to add color, texture, and nutrients to the goulash. Some good options include carrots, celery, bell peppers, and mushrooms.
- Season the goulash generously with salt, pepper, and paprika. You can also add other spices, such as garlic powder, onion powder, or cumin, to taste.
- Simmer the goulash over low heat for at least 1 hour, or until the beef is tender and the vegetables are cooked through.
- Serve the goulash over egg noodles, mashed potatoes, or rice. You can also garnish it with sour cream, chopped parsley, or grated Parmesan cheese.
- Leftover goulash can be stored in the refrigerator for up to 3 days or in the freezer for up to 3 months.
Conclusion:
Dee's baked goulash is a hearty and comforting dish that is perfect for a cold winter night. It is easy to make and can be tailored to your own taste preferences. With its combination of beef, vegetables, and spices, this goulash is sure to be a hit with your family and friends.
