Time 50m

Number Of Ingredients 10

1-pound bacon
10-ounces plain cream cheese, softened
1 tablespoon sour cream
2 tablespoons minced fresh chives
1/4 cup minced jalapeño, seeded
1/2 cup sharp white cheddar, shredded
2 small shallots, minced
1/4 teaspoon coarse salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Steps:

  • In a large skillet over medium-low heat, cook the bacon until crispy, about 8-10 minutes, and then set aside on a paper towel-lined plate to soak up any excess oil. Once cooled, finely chop the bacon and place it in a wide shallow bowl.
  • In a large bowl, mix together the cream cheese, sour cream, chives, jalapenos, cheddar, shallots, salt, garlic powder, and onion powder until thoroughly combined. Season to taste with salt and then refrigerate for at least 20 minutes.
  • Using a tablespoon or small cookie scoop as your guide, portion out a small amount of the filling and form it into a ball. Roll the cheese ball through the bacon and repeat until all of the mixture is gone.
  • Refrigerate until you're ready to serve.

JALAPEñO POPPERS

Jalapeño Poppers image

There are many delicious versions of jalapeño poppers: Some are breaded and deep-fried, others use two kinds of cheese, and another, called armadillo eggs, calls for enrobing the cheese-stuffed peppers with ground meat and bacon. These easy-baked poppers are filled with tangy cream cheese - brightened with scallions, cilantro, garlic and lime zest - then wrapped with bacon for looks, salt and crunch. For a vegetarian variation, sprinkle the stuffed jalapeños with finely crumbled tortilla chips before baking to complement the crisp-tender chiles and the molten-cheese filling.

Time 1h

Yield 24 poppers

Number Of Ingredients 8

12 medium jalapeños (no longer than 3 inches each, about 2/3 pound total)
8 ounces cream cheese, softened
Scant 1/4 cup finely chopped cilantro
3 scallions, whites and greens parts, trimmed and very thinly sliced (about 1/4 cup)
1 garlic clove, finely chopped
1 lime, zested (about 1/2 teaspoon), optional
Kosher salt and black pepper
12 thin slices uncooked bacon (thick-cut bacon won't cook as evenly), halved crosswise

Steps:

  • Heat the oven to 400 degrees. Line a large baking sheet with aluminum foil, then top with a wire rack.
  • Halve jalapeños lengthwise. (Do your best to halve them through their stems for added visual appeal.) Using the tip of a small spoon, scoop out and discard the seeds. Set the halved jalapeños aside.
  • In a medium bowl, stir together the cream cheese, cilantro, scallions, garlic and lime zest, if using; season generously with salt and pepper.
  • Season the inside of each halved jalapeño with salt and pepper, then fill each with about 2 teaspoons of the cream cheese mixture. (Fill until there's a slight dome on top.) Wrap each stuffed jalapeño with 1 piece of bacon, setting one tip of bacon on top of the cream cheese filling, then wrapping the bacon under and over the popper at an angle, so the bacon covers the filling on top in two layers. (The bacon will shrink as it cooks, so you want to make sure the top of the popper is well covered.) Arrange poppers evenly on the wire rack, nestling each popper between two parallel wires to keep it upright so the cream cheese doesn't spill during baking.
  • Transfer to the oven, and bake until bacon is cooked through, about 25 minutes. Broil on the rack closest to the broiler until crisp, about 2 minutes. Let cool for 5 minutes, then serve warm.

Tips:

  • Choose the right peppers: For this recipe, it's best to use fresh jalapeños. Look for peppers that are firm and have a deep green color. Avoid peppers that are bruised or have blemishes.
  • Wear gloves when handling the peppers: Jalapeños can be spicy, so it's important to wear gloves when handling them. This will help to protect your hands from the capsaicin, which is the compound that gives peppers their heat.
  • Remove the seeds and ribs from the peppers: To reduce the heat of the peppers, you can remove the seeds and ribs. This is also a good way to remove any bitter flavor from the peppers.
  • Use a food processor to make the filling: A food processor is the easiest way to make the filling for the poppers. Simply add all of the ingredients to the food processor and pulse until smooth.
  • Chill the filling before baking: Chilling the filling before baking will help to keep the poppers from spreading. This will also help to give the poppers a more firm texture.
  • Bake the poppers until they are golden brown: The poppers are done baking when they are golden brown and crispy. This usually takes about 15-20 minutes.

Conclusion:

Deconstructed jalapeño poppers are a delicious and easy-to-make appetizer. They are perfect for parties or potlucks. Plus, they can be made ahead of time, so you can enjoy them whenever you want. So next time you're looking for a tasty and unique appetizer, give these deconstructed jalapeño poppers a try. You won't be disappointed!
