- Preheat oven to 350 degrees F.
- In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
- Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
- In the meantime, in a small bowl mix together all of the ingredients for the sauce.
- Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
- Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
- Serve with mashed potatoes and any extra sauce.

- Preheat the oven to 350 degrees.
- Sauté the vegetables: Melt the butter in a small saucepan over medium heat. Sauté the onions and peppers for 4 minutes. Add the garlic and sauté for 1 more minute. Remove and let cool.
- Combine Wet ingredients: Whisk together the egg, milk, mustard, ketchup, BBQ Sauce, Worcestershire sauce, cheese, salt, and pepper in a large bowl.
- Add remaining ingredients: Stir in the Ritz crackers, then add the cooled onions/peppers/garlic. Add the ground beef and gently mix until just combined. Don't overwork the meat or it will become tough.
- Form into loaves: Divide the meat mixture into 4 equal parts and mold them into 5-inch loaves. Place on a parchment paper lined baking sheet (preferably a sheet that has raised edges to avoid overflow from drippings.) Combine the glaze ingredients and brush half of it over the meatloaf.
- Bake Once/Remove Grease: Bake for 25 minutes and carefully remove it from the oven, there will be grease to remove. To do this, carefully transfer each meatloaf to a new parchment paper lined baking sheet using a spatula. OR, transfer to a plate and replace the original baking sheet with new parchment paper. - Bake Twice: Brush remaining glaze on top of the meatloaf. Bake for 15 more minutes, the internal temperature should be 160 degrees.
- Serve: I like to brush a little more ketchup on top prior to serving. Serve with mashed potatoes and roasted green beans or roasted carrots.

This is my grandma's meat loaf recipe that she has been making for years! It doesn't taste like the regular bland meatloaf. It is very affordable to make and this one has a bit of a sweet taste thanks to the sauce you put on top! - Mix meat, crackers, milk, eggs, onion, parsley, sage, and salt in a large bowl with HANDS.
- Put the mixture in an ungreased 8x10 loaf pan and shape it so that there is a small amount of space between the meatloaf and the pan on all sides.

- Preheat oven to 350 degrees.
- Using a food processor, grind the croutons with the chili powder. Set aside. Process the onion, garlic, carrot, pepper, and parsley in the food processor until finely, finely diced.
- Mix the meat, ground croutons, and vegetables until well mixed. Season liberally with sea salt and pepper. Add the 3 eggs, mix without squeezing the meat too much.
- Mix the bottle of A1, ketchup, brown sugar, hot sauce, and dijon mustard in a bowl.
- I made mine freehanded, which in my opinion is more fun.
- When you form the loaf you want it to be pretty even to ensure its fully cooked when all is said and done. Mine was about 3 1/2 inches thick.
- Place strips of bacon horizontally over the loaf until it is fully covered. Bake in oven for 10 minutes. Take out of oven and add a heavy glaze of sauce. Bake for another 40 minutes. Add another layer of sauce. Cook until done, probably another 30-45 minutes. Using a meat thermometer, ensure that the thickest part of the loaf is 160 degrees. Add a final layer of sauce to the loaf and cover with foil until ready to serve. It stayed pretty hot for about an hour.
