1 (18 1/2 ounce) box white cake mix, I use duncan hines
1/4 cup brown sugar, packed I use dark brown
1 cup chocolate chips
1/2 cup chopped nuts
3/4 cup vegetable oil
1 large egg

Steps:

  • Preheat oven to 375°.
  • In a large bowl stir all ingredients together until well blended.
  • Drop in rounded teaspoons onto an ungreased cookie sheet.
  • Bake for 10-12 minutes until center of cookie is golden brown.
  • Cool on cookie sheet for 1 minute.
  • Remove to rack to cool.

1 cup butter, softened
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
2 1/4 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup raspberry jam
glaze
1 cup icing sugar
2 tablespoons evaporated milk
1/2 teaspoon vanilla extract

Steps:

  • In a mixing bowl, cream butter and sugar.
  • beat in egg and vanilla.
  • Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well.
  • Divide dough into four portions; shape each into a 10 inch X 21/2 inch log.
  • Place 4 inches apart on greased or foil lined baking sheets.
  • Make a 1/2 inch depression down center of each log.
  • Bake at 350 for 10 minutes.
  • Fill depressions with jam.
  • Bake 10-15 minutes longer or until lightly browned.
  • Cool for 2 minutes.
  • Remove to a cutting board; cut into 3/4 inch slices.
  • Place on wire racks.
  • In a small bowl, combine glaze ingredients until smooth; drizzle over warm cookies.
  • Cool completely.

7 ounces bittersweet chocolate, roughly chopped
1/3 cup butter
2 eggs
2/3 cup sugar
1/4 cup brown sugar
1/2 teaspoon vanilla
2/3 cup flour
1 tablespoon cocoa powder
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup bittersweet chocolate, roughly chopped
3/4 cup grilled nuts, roughly chopped (pecans, walnuts, cashews, macadam)

Steps:

  • Preheat oven at 350°F In a double-boiler, melt the first quantity of chocolate (7 ounce) and butter at low heat.
  • With a mixer, beat eggs, sugar and brown sugar for 2 minutes. Add vanilla and beat well.
  • Add melted chocolate and beat 1 minute.
  • Sift the dry ingredients. Add to the chocolate mixture. Add the chopped chocolate and nuts. Fold delicately.
  • On a baking sheet with parchment paper, put 2 tablespoon of mixture, leaving 1 1/2 inch between each cookies. Flatten lightly.
  • Bake in the third part of the oven 9 to 11 minutes. The sides will be crunchy and the center still soft. Don't cook the cookies too much because they will keep on cooking out of the oven, that way they will stay soft when cold. Let them cool a little bit before touching them, then cool completely on a rack.

Steps:

  • Set oven to 350 degrees.

  • Melt semi-sweet chocolate and cool.

1/2 c shortening
1/2 c brown sugar, firmly packed
1 egg
1/2 c sour cream
1 1/2 tsp real vanilla extract
3 c semi-sweet chocolate chips(divided)
1 3/4 c all purpose flour
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 c chopped walnuts or pecans

Steps:

  • 1. Cream together the shortening with the brown sugar.
  • 2. Mix into the creamed mixture the egg, sour cream, and vanilla.
  • 3. Melt HALF(1 1/2 cups) of the chocolate chips in the microwave (in 20 second intervals, stirring in between, until almost melted, then stop. It will continue melting) Add to the creamed mixture.
  • 4. In separate bowl, mix flour, cinnamon, salt, baking powder, and baking soda. Add to the creamed mixture, stirring until smooth.
  • 5. Fold in nuts and remaining(1 1/2 cups) chocolate chips (or can substitute peanut butter chips instead). Chill dough for about 1/2 hour.
  • 6. Preheat oven to 350 degrees. Place heaping tsps of dough on greased cookie sheets and bake for 10-12 mins, or just until set up. Do not overbake, cookies will still be a bit soft because of all the chocolate. Let cool for a few mins on the cookie sheet before placing on cooling racks. Wrap these babies in pretty containers and deliver to your friends with a carton of milk! They will love you!
