2 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¾ cup shortening
1 tablespoon orange zest
¼ cup orange juice
1 egg
1 cup packed brown sugar
1 cup butterscotch chips
1 cup shredded coconut

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13 inch pan.
  • In a medium bowl, combine the flour, baking soda, baking powder and salt. In a separate bowl, cream the shortening and brown sugar. Mix in the egg, orange juice and zest until well blended. Gradually add the dry ingredients, stirring constantly. Stir in the butterscotch chips and coconut. Pour the dough into greased baking pan.
  • Bake for 25 to 30 minutes, until top is golden brown. Let cool before cutting into squares.

I originally had this when my Mother made it from her recipe and after she passed away the recipe was lost, well this is a version I found online I don't know where the origin of it is from,but it seemed to match my Mothers recipe almost identically. I can never seem to make enough. People go nuts over it. Enjoy :)

1 box yellow cake mix
1 can(s) 15 oz pumpkin puree
1 can(s) 12 oz evaporated milk
3 large eggs
1 1/2 c sugar
1 tsp cinnamon, ground
1/2 tsp salt
1 1/2 c chopped pecans
1 c butter melted

Steps:

  • 1. Heat oven to 350 degrees F. then Grease bottom of 9 x 13? pan.
  • 2. Mix pumpkin, milk, eggs, sugar, cinnamon, and salt. Pour mixture into greased pan.
  • 3. Sprinkle dry cake mix over pumpkin mixture and top with pecans. Drizzle melted butter over pecans.
  • 4. Bake 50-55 minutes

1 3/4 cups flour
3/4 cup confectioners' sugar
1/4 cup unsweetened cocoa powder (Baking)
1 cup butter (cold) or 1 cup margarine (cold)
2 (12 ounce) bags semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk (chocolate is best but regular white will do)
3/4 cup nuts, chopped (I use Pecans,use what you like)
1 teaspoon vanilla
1 (12 ounce) bag milk chocolate chips

Steps:

  • CRUST:.
  • Combine Flour,Sugar,Cocoa,and Butter. Use two knives or pastry blender.(pastry blender works best.) Mixture will be crumbley. Press firmly into a 13x9 pan. Bake at 350 for 15 minutes.
  • FILLING:.
  • In saucepan combine both pkgs of semi-sweet Choc Chips,Vanilla, Milk,and Nuts if using. Stir until well melted. Pour over prepared crust.
  • TOPPING:.
  • Sprinkle Milk Chocolate chips on top and press on to top of filling. Bake for 20 minutes. Cool at least 10 minutes(will be hard to wait after smelling this bake! Cut into bars and enjoy,I cut into very small bars,this is very rich,and ya might overdose yourself on CHOCOLATE! Enjoy, Sassycook.

1 tablespoon rum
3/4 cup butter, cubed
1/3 cup baking cocoa

1-1/2 cups graham cracker crumbs
1 cup sweetened shredded coconut
1/2 cup chopped walnuts
1/2 cup finely chopped red and green candied cherries
FILLING:
1/4 cup butter, softened
3 tablespoons 2% milk
2 tablespoons instant vanilla pudding mix
2-1/2 cups confectioners' sugar
TOPPING:
4 ounces semisweet chocolate, chopped
1 tablespoon butter
1/2 cup confectioners' sugar
2 teaspoons 2% milk

Steps:

  • In a small bowl, combine ginger and rum; set aside., In a large heavy saucepan, combine the butter, cocoa and sugar. Cook and stir over medium-low heat until melted. Whisk a small amount of hot mixture into egg. Return all to the pan, whisking constantly. Cook and stir over medium-low heat until mixture reaches 160°., Remove from the heat and stir in vanilla. Stir in the cracker crumbs, coconut, walnuts, cherries and ginger mixture. Press into a foil-lined 9-in. square baking pan., For filling, in a large bowl, beat the butter, milk and pudding mix until blended. Gradually beat in confectioners' sugar until smooth; spread over crust. Freeze for 15 minutes or until set., In a microwave, melt chocolate and butter; stir until smooth. Spread over top. Combine confectioners' sugar and milk; drizzle over top. Refrigerate for 1 hour or until set. Cut into bars.

1 1/2 cups quick-cooking oats

Steps:

  • Date Filling: Mix 3 cups chopped dates (1 lb.) with 1/4 cup sugar and 1 1/2 cups water in saucepan.
  • Cook over low heat, stirring constantly, about 10 minutes or until thickened; Cool.
  • Grease 13x9 baking pan.
  • Crust Mixture: Cream butter, shortening, and brown sugar.
  • Mix in remaining ingredients.
  • Press half the mixture in bottom of pan.
  • Spread with filling.

I made these for a company bake-off and won first prize. This is time consuming, but is one of the most fabulous chocolate desserts I have ever made! It can be made with or without the ganache topping, but I strongly suggest that you make it totally awesome by adding the ganche! Don't eat too many -- they are rich!

1 1/2 cups milk chocolate chips
1 cup peanut butter, creamy
5 cups corn flakes, crushed lightly
3/4 cup butter
2 3/4 cups confectioners' sugar
1/4 cup cocoa powder
5 ounces semisweet chocolate (I used Baker's 1 oz. squares)
4 egg yolks (pasteurized if available)
2 cups heavy cream
2 tablespoons sugar
2 cups heavy cream
2 1/2 cups semisweet chocolate

Steps:

  • To make crust:.
  • Line a 9 x 13" cake pan with parchment paper.
  • Melt milk chocolate in a double boiler.
  • Stir peanut butter into melted chocolate. Place crushed corn flakes in a bowl and stir chocolate/peanut butter mixture over them, mixing well.
  • Spread mixture evenly into prepared pan and cool in refrigerator.
  • To make Mousse:.
  • Melt semisweet chocolate in a double boiler. Cream butter and sugar in a mixer fitted with a paddle, beating until light and fluffy.
  • Add sifted cocoa powder and mix well. Scrape down bowl and add chocolate.
  • Continue mixing and add egg yolks, one at a time, beating well after each addition.
  • Fold in heavy cream that has been beaten to firm peak.
  • Mix well to incorporate, leaving no white streaks in the chocolate.
  • Spread mousse over crust.
  • Chill about 2 hours, until set. Cut into desired size bars with a sharp knife dipped in hot water. (1 x 4-1/2 " cuts will yield about 2 dozen bars).
  • Place bars on a cooling rack that has been placed over a clean baking sheet. (Bars may be completed at this time or coated with ganache).
  • If bars are soft, place rack in freezer until ganache is ready.
  • To make ganache:.
  • Melt chocolate in double boiler.
  • Mix sugar and heavy cream in a small saucepan and bring mixture to a slow boil over low heat(be careful not to scorch the cream).
  • Pour cream over chocolate and stir with a whisk to incorporate, making sure all the chocolate is melted.
  • Strain mixture to remove any pieces of unmelted chocolate.
  • Let cool for about 1 hour.
  • Pour ganache over firm bars to coat. Refrigerate for 1 hour to firm ganache.
  • The bars should be stored in the refrigerator.
