1 1/4 teaspoons baking soda
1 cup (2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup caramels, such as Kraft (about 20), halved

Tips:

  • Use a kitchen scale to accurately measure ingredients, especially for cookies, where precise measurements are crucial.
  • Always chill cookie dough before baking. This step firms up the butter, preventing the cookies from spreading too much in the oven.
  • Line your baking sheets with parchment paper or a silicone baking mat for easy cleanup and to prevent sticking.
  • Bake cookies until the edges are golden brown and the centers are set but not overbaked. Overbaking will result in dry, crumbly cookies.
  • Let cookies cool completely on the baking sheet before transferring them to a wire rack. This will help them to hold their shape.
  • Store cookies in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.

The recipes in this article offer a variety of delicious and tempting caramel cookies, ranging from classic chewy caramel cookies to decadent caramel-stuffed cookies.
