OLD-FASHIONED PECAN PIE

Old-Fashioned Pecan Pie image

It's impossible to go wrong with pecan pie. Especially one that is really loaded with nuts, has a little verve from orange zest, and isn't overly sweet-exactly like the one here. Taking the time to track down new-crop pecans will push things right over the top.

Yield Makes 8 servings

Pastry dough
3/4 stick unsalted butter
1 1/4 cups packed light brown sugar
3/4 cup light corn syrup
2 teaspoon pure vanilla extract
1/2 teaspoon grated orange zest
1/4 teaspoon salt
3 large eggs
2 cups pecan halves (1/2 pound)
Whipped cream or vanilla ice cream (for serving; optional)

Steps:

  • Preheat oven to 350°F with a baking sheet on middle rack.
  • Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 12-inch round and fit into a 9-inch pie plate. Trim edge, leaving a 1/2-inch overhang. Fold overhang under and lightly press against rim of pie plate, then crimp decoratively. Lightly prick bottom all over with a fork. Chill until firm, at least 30 minutes (or freeze 10 minutes).
  • Meanwhile, melt butter in a small heavy saucepan over medium heat. Add brown sugar, whisking until smooth. Remove from heat and whisk in corn syrup, vanilla, zest, and salt. Lightly beat eggs in a medium bowl, then whisk in corn syrup mixture.
  • Put pecans in pie shell and pour corn syrup mixture evenly over them. Bake on hot baking sheet until filling is set, 50 minutes to 1 hour. Cool completely.

Provided by jeknudson

Number Of Ingredients 8

9 -inch unbaked pie crust
1 cup light corn syrup
1 cup firmly packed dark brown sugar
3 eggs, slightly beaten
1/3 cup butter, melted
1/2 teaspoon salt
1 teaspoon vanilla
1 heaping cup pecan halves

Steps:

  • Heat oven to 350 degrees. In a large bowl, combine corn syrup, sugar, eggs, butter, salt and vanilla; mix well. Pour into unbaked pie crust; sprinkle with pecan halves. Bake at 350 degrees for 45 to 50 minutes or until center is set.(Toothpick inserted in center comes out clean when pie is done.) Cool. If crust or pie appears to be getting too brown, cover with foil the remaining baking time. Tip: The original recipe stated that the pie should be baked 45 to 50 minutes in a preheated 350-degree gas oven. If an electric oven is used, it may be necessary to add 15 to 20 minutes to the baking time. (Begin testing the pie with a toothpick after 45 minutes.)

Tips:

  • Use fresh, high-quality pecans. This will give your pie the best flavor.
  • Toast the pecans before using them. This will enhance their flavor and make them more fragrant.
  • Use a combination of light and dark brown sugar. This will give the pie a rich, complex flavor.
  • Don't overmix the filling. Overmixing will make the pie tough.
  • Bake the pie until the center is set. The pie should be slightly jiggly in the center when you take it out of the oven.
  • Let the pie cool completely before serving. This will allow the filling to set and the flavors to develop.

Conclusion:

Dear Abby's pecan pie is a classic holiday dessert that is sure to please everyone at your table. With its rich, buttery filling and crunchy pecans, this pie is a true crowd-pleaser. Follow these tips to make sure your pie turns out perfect every time.
