Welcome to a culinary journey that will tantalize your taste buds and transport you to the heart of Italy. Discover the delectable Italian Sausage Rolls, a symphony of flavors wrapped in a golden, flaky crust. This article presents a collection of recipes that cater to diverse dietary preferences, including gluten-free and vegan options.
For those who love classic Italian flavors, the Traditional Italian Sausage Rolls are a must-try. Ground sausage, aromatic herbs, and a blend of cheeses come together in a savory filling, encased in a crispy pastry dough. If you're seeking a healthier alternative, the Lightened-Up Italian Sausage Rolls offer a delightful balance of taste and nutrition. Ground turkey or chicken replaces the sausage, while whole wheat flour and reduced-fat cheese lighten the dish without compromising on flavor.
For those with gluten sensitivities, the Gluten-Free Italian Sausage Rolls provide a delicious solution. A combination of almond flour, tapioca flour, and psyllium husk creates a crust that's both crispy and tender, while the savory filling remains irresistibly flavorful. And for our vegan friends, the Vegan Italian Sausage Rolls are a plant-based delight. Meatless sausage, made from a blend of lentils, mushrooms, and walnuts, pairs perfectly with a rich tomato sauce and vegan cheese.
No matter your dietary preferences, the Italian Sausage Rolls in this article promise an unforgettable culinary experience. So, gather your ingredients, preheat your oven, and prepare to indulge in a taste of Italy right from your kitchen.

Steps:
- Heat a medium skillet over medium heat. Add the bacon, onion and celery, and cook for 4 minutes, until slightly softened. Add the garlic and cook 1 more minute. Remove from the heat and transfer the bacon mixture to a plate. Let cool for 10 minutes.
- In a large bowl, combine the sausage, parsley, panko, 1 egg, salt, pepper and cooled bacon mixture. Mix well to combine. Cover and refrigerate until ready to use.
- Meanwhile, open the puff pastry sheets on a very lightly floured cutting board (you should have 2 sheets, measuring 10-inches by 10-inches). Cut each in half to make 4 rectangles, 5-inches by 10-inches each. Lay each rectangle so that the long side faces you.
- Remove the sausage mixture from the refrigerator and divide it into 4 portions. Form each portion into the shape of a long log, about 1-inch thick, and place one lengthwise in the center of each puff pastry rectangle. (The sausage should stretch the full length of the pastry).
- In a small bowl, beat the remaining egg with 1 tablespoon of water. Brush all of the borders of the puff pastry with the egg and carefully roll the pastries over the sausage mixture to create a log shape (making sure that the borders overlap slightly). Place each roll seam side down on a sheet tray lined with parchment paper. Freeze for 30 minutes or refrigerate for up to 1 hour. (Hang on to the egg wash for later).
- Preheat the oven to 400 degrees. Using a sharp knife, cut each sausage roll into 6 equal portions. Transfer the pieces to a parchment lined baking sheet, seam side down, about 1-inch apart. Brush the tops of the rolls with the egg wash. Bake for 20-22 minutes, or until the puff pastry is puffed and golden on top.

ITALIAN SAUSAGE ROLLS
Steps:
- Preheat oven to 350 degrees F.
- Lay the puff pastry sheets out on a flat work surface. Split the sausage casings lengthwise and turn the mild sausage meat out onto 1 pastry sheet and the hot sausage meat out onto the other pastry sheet. Gently pat the meat out to fit the pastry sheets, being careful to leave a 1/2-inch strip bare on both long sides of each sheet. Top with 3 tablespoons of Romano and 5 basil leaves per sheet. Starting with 1 of the bare strips, roll the pastry tightly around the filling. The bare strip on the far end will stick to itself.
- Place the rolls in the freezer for at least 1 hour; they should be just frozen enough to make slicing easy. (The recipe can be made to this point 1 week in advance.) Slice the rolls into 1/2-inch pieces, place on baking sheets and place in the oven for 20 to 30 minutes, or until golden brown. Remove and let cool 5 minutes before serving.
VENISON "SAUSAGE" ROLLS

Yield 8 servings of 2 appetizers each
Number Of Ingredients 10
Steps:
- Make "sausage" mixture by mixing venison, pork, eggs, parsley, thyme, rosemary, onion, and salt and pepper, to taste. Saute sausage mixture over medium-high heat on the stovetop until browned, using a wooden spoon to keep the texture of the mixture "fine" (not chunky) while cooking. Drain the meat mixture well and set aside to cool.
- Preheat oven to 350 degrees F.
- Roll out each puff pastry sheet and cut each of the 4 sheets into 4 squares, yielding 16 squares. (These will be 4 1/2 or 5-inch square.) Spread the "sausage" mixture, over the surface of each of the 16 squares and roll up the dough "jelly roll" style (so the cross-section of the roll will be a spiral design), seal dough on the ends by crimping, and place on a baking sheet. Bake until golden brown, approximately 15 minutes, until golden brown.
DAWN'S ITALIAN SAUSAGE ROLLS
Steps:
- Preheat oven to 350 bake. Clear an area on the table or counter then sprinkle with flour. Roll dough out on floured surface to a round shape, like a pizza. Keep the dough around 1/4 inch thick. Flip dough over and repeat. Do not over roll the dough or make it too thin. Once rolled out then rub the dough with the olive oil and crushed garlic. Spread the sausage on the dough but be careful not to rip the dough. Top with the remaining ingredients. Carefully, roll the dough into a log shape. To ensure the log stays closed, you may need to spread a little olive oil so the dough adheres. Then cut into 1 inch pin wheels. Place each wheel flat, on a greased 9x11 baking pan, 2 inches apart. Let stand for 10 minutes then place in the oven and bake for 25-30 minutes or until golden brown. Best served hot. Store in refrigerator, if there's any left. They go fast!!They can be re-heated in the microwave for 10-15 seconds but they are better when re-heated in a toaster oven. It makes them crunchy and tasty! Level: Moderate Mangia! - Unfold pastry sheet on floured work surface. Roll out to 12x10-inch rectangle. Cut pastry crosswise into three 10x4-inch strips. Brush each strip with beaten egg. Spoon 1/3 of sausage mixture in narrow strip lengthwise down center of each pastry strip. Fold long sides in, covering filling and overlapping slightly in center; press seam to seal. Arrange rolls seam side down on prepared sheet. Cover and chill until rolls are firm, at least 10 minutes and up to 1 hour.

Tips:
- Use a sharp knife to cut the sausage into thin, even slices. This will help them cook evenly.
- If you don't have a meat grinder, you can pulse the sausage in a food processor until it is finely chopped.
- Be sure to brown the sausage before adding it to the dough. This will help to develop its flavor.
- Use a dough that is slightly sticky. This will help the rolls to hold together.
- Don't overwork the dough. Overworking will make the rolls tough.
- Let the rolls rise in a warm place until they are double in size. This will help them to be light and fluffy.
- Bake the rolls at a high temperature for a short amount of time. This will help them to get a crispy crust.
