DAVY CROCKETT'S COUSIN BARS

Davy Crockett's Cousin Bars image

I've always wanted an oatmeal raisin bar cookie recipe that's chewy and cookie-ish, not too cakey. (I'm too lazy to drop cookies.) I became such a fan of Recipe #98981 that I decided to see if it would work as an oatmeal raisin cookie. It worked great! This pan was gobbled up just like the original. Thanks Marg!

Time 25m

Yield 30 serving(s)

Number Of Ingredients 14

2 cups flour (I use up to 1/2 c of this as wheat germ)
1/2 cup sugar
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon clove
1 cup brown sugar
2 cups oats (I don't use instant)
1 cup walnuts, coarsely chopped
2 eggs
1 cup vegetable oil
1 teaspoon vanilla
1 cup raisins

Steps:

  • Optional: For plump, moist raisins, cover the raisins with very hot water in a small dish and microwave them on high for a minute or two.
  • Preheat the oven to 350°F.
  • In a large mixing bowl, mix the dry ingredients together with a whisk.
  • Stir in the brown sugar, oats, and walnuts.
  • Combine eggs, oil, vanilla, and drained raisins in a smaller bowl.
  • Stir the wet ingredients into the dry ingredients.
  • Press into an ungreased 15x10x1 inch jelly roll pan.
  • Bake for 15 minutes or until the edges are golden brown.

Tips:

  • Use softened butter for a smoother cookie dough.
  • Chill the cookie dough for at least 30 minutes before baking for a chewier cookie.
  • Use a cookie scoop to ensure uniform cookie sizes and shapes.
  • Bake the cookies until the edges are just starting to brown for a soft and chewy cookie.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

Davy Crockett Cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their soft and chewy texture and sweet and nutty flavor, these cookies are sure to be a hit with everyone who tries them.
