1 medium green pepper, chopped
2 medium onions, chopped
1/2 cup chopped celery
1 tablespoon vegetable oil
2 pounds ground beef
2 cans (28 ounces each) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 cup water
2 tablespoons Worcestershire sauce
1 to 2 tablespoons chili powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon pepper
2 cans (16 ounces each) kidney beans, rinsed and drained
Tortilla chips, optional

Steps:

  • In a Dutch oven or large soup kettle, saute green pepper, onions and celery in oil until tender, about 5 minutes. Add ground beef and cook until browned; drain. Stir in tomatoes, tomato sauce, water, Worcestershire sauce and seasonings. Bring to a boil; reduce heat. Cover and simmer for 1-1/2 hours, stirring occasionally. Add kidney beans. 4 cloves garlic, minced
1 (1.25 ounce) package chili seasoning mix, or to taste
1 dash hot sauce, or to taste

1/4 cup olive oil
2 medium onions, finely chopped
2 cloves garlic, finely chopped
2 medium carrots, finely chopped
2 ribs celery, finely chopped
2 red bell peppers, cored, seeded and roughly chopped
1 heaping teaspoon chili powder
1 heaping teaspoon ground cumin
1 heaping teaspoon ground cinnamon
Sea salt
freshly ground black pepper
1 15-ounce can garbanzo beans (chickpeas), drained
1 15-ounce can red kidney beans, drained
2 14-ounce cans diced tomatoes
1 pound good-quality ground beef
1/2 cup (packed) fresh cilantro sprigs
2 tablespoons balsamic vinegar

Steps:

  • Place a large casserole over medium-high heat, and add 1/4 cup olive oil. When the oil is hot, add the onions, garlic, carrots, celery and red bell peppers. Stir, and add chili powder, cumin, cinnamon and a good pinch of salt and pepper. Stir every 30 seconds for about 7 minutes, until softened and lightly colored.
