MEMPHIS DRY-RUB RIBS

This Juneteenth showstopper, using a dry rub from Greg Collier, the chef and co-owner of Leah & Louise in Charlotte, N.C., is an ode to the flavors of the Mississippi Delta. The smoky, sweet, salty pork ribs slow roast in the oven, yielding tender meat seasoned with a traditional barbecue dry rub. You can substitute the pork for slab beef spareribs with equally good results, or use mushrooms for a vegetarian approach. Crushed peanuts and sweet-potato pikliz make the ribs a meal.

Yield 3 to 6 servings

Number Of Ingredients 10

1/2 (packed) cup dark brown sugar
1/4 cup hot paprika
2 tablespoons kosher salt
2 tablespoons onion powder
2 tablespoons garlic powder
1 tablespoon ground black pepper

Tips:

  • Make sure your ribs are dry before applying the rub. This will help the rub adhere better and create a more flavorful crust.
  • Apply the rub liberally, but don't overdo it. You want the ribs to be coated, but you don't want the rub to be so thick that it overpowers the meat.
  • Let the ribs rest for at least 30 minutes before cooking. This will allow the rub to penetrate the meat and develop its flavor.
  • Cook the ribs slowly and low. This will help the meat to become tender and fall off the bone.
  • Baste the ribs with your favorite sauce during the last hour of cooking. This will help to keep them moist and add extra flavor.

Conclusion:

Ribs are a delicious and versatile dish that can be enjoyed by people of all ages. Whether you're cooking them for a backyard barbecue or a special occasion, these recipes will help you create ribs that are sure to impress. So fire up your smoker or grill and get started!
