ALMOND-PECAN DATE TRUFFLES
My daughter and I came across a date candy recipe when she was learning about ancient Egypt. We changed some of the spices and nuts to suit our taste. My dad was a beekeeper and Mom always made a coconut date ball for Christmas. The truffles remind me of past Christmases and are ideal for something quick yet festive on a holiday tray. -Lori Daniels, Beverly, West Virginia

DATE TRUFFLES (MADGOOGA)
This recipe is easy to make and popular in Iraq since one of the things that Iraq is famous for is dates. We have lots of varieties and kinds of dates from chewy to very hard. It is better to use this recipe with hard type of dates (called kasab) not soft, but you could use soft dates if you didn't find hard dates. Sometimes Ii use already-crushed dates from the market and it goes well too. There are lots of varieties for the coating of the truffles, use as many coatings as you like according to your personal taste.

Steps:
- Put all ingredients in a bowl.
- Grind the mixture with meat grinder finely.
- Shape the dates into small balls 2 cm in diameter with slightly oiled hand with vegetable oil (I like to shape them roughly so they are not so perfect balls).
- Roll the truffles in your selected coating and place on parchment paper or tray.
- Put the truffles in small decorative paper cups and arrange them in the serving plate.
- If you bought dates that are already ground and pitted, you don't need to grind them in the meat grinder, simply knead ingredients together by hand or you can grind it again by the meat grinder.
DATE TRUFFLES
Martha's take on the Gulf confections known as tamrieh calls for coating spiced date rounds with chocolate rather than serving them with the traditional chocolate dipping sauce. Rolling the truffles in pistachios, sesame seeds, and toasted coconut takes them over the top.

- Add butter and stir until the butter is melted and mixture is well combined. Transfer to the bowl of an electric mixer and let cool, at least 5 minutes.
- Add date paste, cocoa, and salt to bowl and beat until well combined using the paddle attachment. Scoop balls using a tablespoon or a small ice-cream scoop and drop onto a parchment-lined baking sheet. Roll between damp hands to smooth. Refrigerate truffles at least 1 hour and up to overnight.

Tips:
- Use high-quality dates: Softer, plump dates are easier to work with and will result in a smoother truffle.
- Soak the dates: Soaking the dates in warm water helps to soften them and make them easier to blend.
- Use a food processor: A food processor is the best tool for blending the dates and other ingredients together until smooth.
- Chill the truffle mixture: Chilling the truffle mixture helps it to set and makes it easier to form the truffles.
- Roll the truffles in a coating of your choice: You can roll the truffles in cocoa powder, chopped nuts, or shredded coconut.
- Store the truffles in the refrigerator: The truffles can be stored in the refrigerator for up to two weeks.
