1 cup walnuts
1 cup dates, pitted
1/4-1/2 cup honey, to taste
1/4-1/2 teaspoon sea salt, to taste

Steps:

  • Grind pecans, walnuts, and dates in a food processor until well chopped and blended. Add honey and continue to process until the mix forms a ball. Be careful not to overprocess.
  • Pie Crust:.
  • Press into bottom and sides of a pie pan before adding filling. Reserve some of the mix to crumble on top of finished pie. Fresh fruit makes a great filling, also a yogurt or tofu "cheesecake" is yummy!
  • Balls:.
  • Use as is or add 1 teaspoons cinnamon and/or 1/2 teaspoons nutmeg or 1 tbls. carob powder or 1-2 tbls. orange zest.

1/2 cup butter, cubed
1 cup sugar
2-1/2 teaspoons vinegar
1 teaspoon ground cinnamon

3 teaspoons granulated sugar
1/4 teaspoon salt
3/4 cup cold butter or margarine, cut into pieces
1/3 cup cold water
3/4 cup light corn syrup
3/4 cup packed brown sugar
1/2 cup butter or margarine, melted
2 teaspoons vanilla
3 eggs
2/3 cup old-fashioned oats
1/2 cup chopped pitted dates
1/2 cup flaked coconut
1 cup whipping cream, whipped
1/2 cup chopped pecans, toasted

Steps:

  • In medium bowl, mix 1 1/4 cups of the flour, the granulated sugar and salt. Cut in 3/4 cup butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all water is absorbed and dough sticks together. On lightly floured surface, shape dough into a ball. Flatten to 1/2-inch thickness, rounding and smoothing edges. Wrap in plastic wrap; refrigerate 1 hour.
  • Heat oven to 350°F. Roll dough, using floured rolling pin, into 12-inch round on lightly floured surface. Fold pastry into quarters and place in 9-inch glass pie plate. Unfold pastry and ease into plate, pressing firmly against bottom and side and being careful not to stretch pastry; flute edges.
  • In large bowl, mix corn syrup, brown sugar, 1/2 cup butter, the vanilla and eggs. Stir in oats, dates and coconut. Pour filling into crustlined plate.
  • Bake 45 minutes or until set. Cool completely on cooling rack, about 2 hours. Garnish with whipped cream and toasted pecans.

1 1/3 cups small pieces pitted dates
1/4 cup brandy
1/2 cup (packed) golden brown sugar
1/4 cup (1/2 stick) unsalted butter, melted
3/4 teaspoon ground nutmeg
1/2 teaspoon salt
2/3 cup dark corn syrup
4 large eggs
1 2/3 cups walnut pieces (about 6 ounces)
Whipped cream

Steps:

  • Preheat oven to 375°F. Roll out dough on floured surface to 12-inch round. Transfer to 9-inch-diameter glass pie dish. Fold edge under; crimp. Pierce crust all over with fork. Freeze 10 minutes. Line with foil; fill with dried beans or pie weights.
  • Bake crust until sides are set, about 15 minutes. Remove foil and beans. Bake until bottom begins to color, piercing with toothpick if crust bubbles, about 10 minutes longer. Cool on rack 10 minutes.
  • Meanwhile, stir dates and brandy in small bowl to blend. Mix brown sugar, butter, nutmeg and salt in medium bowl until paste forms. Whisk in corn syrup, then 3 eggs. Add nuts and date mixture. Beat 1 egg to blend in small bowl for glaze.
  • Brush inside of crust with some of glaze. Pour filling into crust. Bake 15 minutes. Cover edges of crust with foil. Continue to bake pie until filling is puffed and set in center, about 20 minutes. Transfer pie to rack; cool. (Can be prepared 1 day ahead. Let stand at room temperature.)
  • Serve pie with whipped cream.

1 c corn syrup
1/4 tsp salt
1 Tbsp all purpose flour
2 eggs
1 Tbsp melted butter
1 tsp vanilla

1 unbaked 9" pastry shell

  • 1. In a large bowl, beat together sugar, syrup, salt, flour, and eggs. Mix well. Add melted butter, vanilla, nuts and dates (cut in pieces).

3 tablespoons cornstarch
3 egg yolks

1 cup chopped dates
½ teaspoon vanilla extract

3 egg whites
¼ teaspoon cream of tartar
6 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Filling: Combine sour cream, 3/4 cup sugar, cornstarch, yolks and cinnamon in a heavy saucepan; cook until thick, stirring continously.   • To Make Meringue: In a large glass or metal mixing bowl, beat egg whites and cream of tartar until foamy. Gradually add remaining sugar, continuing to beat until whites form stiff peaks. Spread meringue over pie, covering completely. Bake in preheated oven for 10 minutes, or until meringue is lightly browned.

1 c date crystals, ( i use fresh or frozen thawed dates chopped and add 1/2 - 1 cup more
3/4 c sugar
3 eggs ( separate egg whites from yolks)
4 oz butter or marg.
1 tsp vanilla
1 Tbsp lemon juice
1 c chopped walnuts
cool whip or whipped cream

  • 1. Cream butter and sugar. Add well beaten egg yolks. Add dates, vanilla and lemon juice. Fold in the stiffly beaten egg whites. Add nuts. Pour into unbaked pie shell. Bake approx 40 min at 350* Serve with whipped cream or cool whip. Enjoy

Add Contreau (or any liquier, or fruit juice) a little at a time until mixture begins to form a ball. 2 1/2 cups raw mixed nuts (I used a combination of cashews, pecans, almonds, and hazelnuts)
1/2 cup chilled pitted dates
1/2 tsp pure vanilla extract
1/2 tsp sea salt
1 tsp baking soda
2 Tbsp melted butter

Steps:

  • Preheat oven to 350 degrees F. Place nuts in food processor and process until finely ground. Add remaining crust ingredients and pulse several times until dates are finely chopped, all ingredients are well integrated, and the nut dough can be pressed together. (Be sure not to go too long or you will end up with nut butter. Tasty, yes, but not what we're going for here!) Transfer to a 9-inch pie dish or tart pan. Press the dough firmly on the bottom and sides to form a crust. You may have just a little left over.

This was a favourite pie of my mother's, she was always coming up with something new n' unique.

2 pkg of dates
4 large eggs (separated)
1/4 tsp baking soda
2 tsp white or golden sugar
2-3 c water
1 single pie shell -baked n' cooled
1 Tbsp cornstarch

Steps:

  • 1. If possible....cut dates in chunks n' put into saucepan so they will cook down quicker.....add 2-3 cups of water n' stir often (LOW heat)...you can add a bit more water until it cooks down to a nice consistency.
  • 2. Once filling has cooked down, add sugar n' baking soda...then mix the cornstarch with water n' add it...stirring well. Let filling cool down for about 15 minutes or so, it will thicken more as it cools, then pour filling into the pie crust, smoothing it to the edges of the crust.
  • 3. Use egg whites( room temp ) for the meringue....adding some sugar a bit at a time, not all at once...about 1-1 & 1/2 tsps....I also add a bit of creme of tarter but you don't have to. When filling has cooled a bit, and once you have formed "peaks" in the meringue....PILE it on top of the date filling, spread it to the edges of the crust....make some nice peaks (can use the back of a spoon). Into a pre-heated oven at 350 degrees for 10-15 minutes until a nice golden brown...do check though to make sure it doesn't get too dark as most ovens vary in temp. ** This pie MUST be served cold....refrigerate for 4-5 hrs. ENJOY !!
