  • 7. Divide your date nut mix as you did your dough. Take aprx 1 1/2 teaspoon of nut mix and place in center of dough(rolled out crust).
  • 8. Folding dough- Fold over bottom side. Then fold in ends (left and right side). Now fold over top. Once dough is sealed, press from center out to move filling to ends.

JONI'S DATE LOGS - CHRISTMAS

Joni's Date Logs - Christmas image

This recipe is from my sister. Our family requests them every holiday season, and it wouldn't be Christmas without them! They are a great addition to your cookie trays and cookie tins to give as gifts to the neighbors, co-workers, friends and family. I hope you will try them, as they truly are fantastic! Word of warning::: These go fast, so make plenty!!! To avoid burning my hands from the hot mixture, I pick up the mixture with a piece of saran wrap, then squeeze it together with my hands and form the log, then roll the log in the coconut. Works great!

DATE NUT LOG

Date Nut Log image

Another one of Mom's recipes. This is similar to some fruit cake recipes that I have seen on JAP but uses only the marshmallows, dates, and nuts -- and is smaller in size so it is not overpowering. You can add other things if you like -- such as raisins, or candied fruit. You may need to add a little more graham crackers and...

Categories     Other Snacks

Number Of Ingredients 6

2 c dates, cut in very small pieces
1 c walnuts, chopped small
1/2 pkg miniature marshmallows cut in half (2 cups)
1/2 pt cream
2 c graham cracker crumbs
additional graham cracker for coating when done

Steps:

  • 1. Mix dates, marshmallows, nuts and cream.
  • 2. Add 2 cups graham cracker crumbs. Work well to solid form, (like meat loaf). Add more crumbs if too sticky
  • 3. Separate into to 2 portions shaped like liverworst (longish tube or log), place on waxed paper (or plastic wrap -- not aluminum foil) onto which more graham crackers have been sprinkled.
  • 4. Roll to cover in crumbs and then wrap and refrigerate for a couple of hours. When they have "set up" they can then be removed and sliced for serving.
  • 5. Will store, as rolls, in fridge for quite a while so they can be made ahead, then removed when needed. Slice just before serving.
  • 6. NOTE 1: It has occurred to me that rather than chopping all these tiny things before hand -- the dryish ingredients could be placed in a food processor which would chop and mangle things very small. Perhaps the cream would assist the chopping or maybe should be added after they are chopped up? Then add the graham cracker crumbs, perhaps by hand, to form and shape.
  • 7. NOTE 2: These are actually quite versatile little things. You can add other things, like cherries, or peanuts. If you have the patience you could even cut up caramels for inclusion, too. You could also add spices like cinnamon, nutmeg, or cloves if you like.
  • 8. And you can roll the logs in coconut, or crushed nuts, instead of more graham crackers, too. After you slice them, they could also be dipped in melted chocolate, so they are all ready to serve with no rush at serving time.
  • 9. This is an opportunity to be creative and make something really special for the people in your life. Enjoy!

DATE NUT ROLL

Date Nut Roll image

Another recipe that my wonderful mom made every year for the holidays. I remember a long object rolled up in a kitchen towel, hanging from the clothes line, and this year I found out it was the date nut roll, hung out to dry. I guess it's part of the process. So this year mom came for Thanksgiving and I documented the recipe, of course adjusting for those without a closeline.

MY GRANDMOTHER'S DATE NUT ROLL

My Grandmother's Date Nut Roll image

Hope you'll join my Just a Pinch group: Family Food Traditions--Sharing JOY on the Journey! My grandmother made this every Christmas, and occasionally, for other occasions, when we begged! It was my favorite!

Provided by Jamie Wyatt

Categories     Candies

Number Of Ingredients 6

3 c sugar
1 c milk
1-8 oz pkg dates
1 Tbsp butter
4 c choped pecans
1 pinch baking soda

Steps:

  • 1. Chop dates. (Do not buy or use dates that are already chopped.)
  • 2. Combine sugar, milk, and dates in a large saucepan. Cook over medium heat, stirring constantly until mixture reaches soft ball 234 degrees.
  • 3. Remove from heat. Stir in butter and nuts. Stir until candy starts to thicken. Divide candy in half, by shaping it into logs on two damp tea towels. roll and shape into 10"X2" logs. Let cool. Slice to serve.

Tips:

  • Use fresh dates: Fresh dates are softer and have a better flavor than dried dates. If you're using dried dates, be sure to soak them in hot water for 10 minutes before using.
  • Don't overcook the mixture: The mixture should be thick and hold together, but it shouldn't be dry. Overcooking will make the logs tough.
  • Be patient when shaping the logs: The mixture is sticky, so it can be difficult to shape. Be patient and work slowly. If the mixture is too sticky, you can chill it for 30 minutes before shaping.
  • Coat the logs in nuts: The nuts add a nice flavor and texture to the logs. You can use any type of nuts you like, but walnuts, pecans, and almonds are all good choices.
  • Chill the logs before serving: Chilling the logs will help them firm up and make them easier to slice.

Conclusion:

Date nut logs are a delicious and easy-to-make treat that are perfect for any occasion. They're made with just a few simple ingredients, and they can be customized to your liking. Whether you prefer them plain or coated in nuts, date nut logs are sure to be a hit.
