Yield 45 cookies

Number Of Ingredients 8

3/4 cup butter
2 eggs, beaten
2 cups sugar
1 pkg. (8 oz) chopped dates
2 tsp. vanilla extract
1 cup chopped nuts
1 1/2 cups Rice Krispies cereal
3 cups sweetened, flaked coconut

Steps:

  • In a pot, melt the butter over medium heat. Add the eggs, sugar and dates. Bring to a boil, and reduce the heat to low. Stir continuously for 10 minutes at low, and remove from heat. Stir in the vanilla, nuts and cereal. Cool the entire mixture, in fridge for 2 hours. Shape into balls, and roll into the coconut.

Tips:

  • Choose the Right Dates: Use soft and pliable dates for a smooth and chewy texture in your Date Nut Balls.
  • Soak the Dates: Soaking the dates in warm water for 10-15 minutes will soften them and make them easier to blend.
  • Use a Food Processor: A food processor is the best tool to blend the dates and nuts until they form a smooth and sticky mixture.
  • Add Sweeteners as Needed: If your dates are not sweet enough, add honey or maple syrup to the mixture until it reaches your desired sweetness.
  • Chill the Mixture: Chilling the mixture for at least 30 minutes will make it easier to shape the Date Nut Balls.
  • Roll in Toppings: Roll the Date Nut Balls in chopped nuts, coconut flakes, or cacao powder for added texture and flavor.
